I can fry up some chops pretty good. OTOH, here some sous vide loin chops
that have been breaded and fried in a wok. They are tender packages of
crispy, juicy, and tender, pork. Hoo boy!

Here's what I made this morning. Braised beef in garlic/vinegar then fried till crispy. Then it's wrapped in a giant tortilla with cheese, eggs, and canned green chile. Ay caramba!

Yes I sous vide a lot of things. They freeze beautifully too.

I had a whole bunch of pork chops so I prepped them sous vide and now they
are awaiting my attention in the freezer)

We are going down to the farm next week and I have those chops in my travel
freezer. I don't have a sous vide machine down there, but I see there is
now something called a 'joule' which doesn't take up anything like the space
of my sous vide machine. Mine does have a saving grace though, that I can
use it if I want to slow cook a large amount.

That's a good idea, I don't have a gas burner but I do have a propane torch.. Now all I need is some matches. I had to whip that up in ten minutes, otherwise, I would have fried that sucker. That would have been just great.

Here's what I made this morning. I had to make this in 15 minutes. I'm getting a work out on fast cooking. This is garlic fried rice with smoked meat. The egg has some ghost pepper flakes on it. My son got this from Trader Joe's when he was on the mainland. I can appreciate the smokey taste but I don't care for how it makes your tongue numb.

Fried is _always_ good!

You made good enough to get my attention for sure.

I do like the slight caramelization a tortila gets with flame - just a
wee bit of char does wonders.

That's a good idea, I don't have a gas burner but I do have a propane torch.
Now all I need is some matches. I had to whip that up in ten minutes,
otherwise, I would have fried that sucker. That would have been just great.

Here's what I made this morning. I had to make this in 15 minutes. I'm
getting a work out on fast cooking. This is garlic fried rice with smoked
meat. The egg has some ghost pepper flakes on it. My son got this from
Trader Joe's when he was on the mainland. I can appreciate the smokey taste
but I don't care for how it makes your tongue numb.
