I enjoy cooking but I sure don't want to do it "on demand". There's a lot more to owning a restaurant than being a good cook. Jill |

The breast (on any water fowl) needs puncturing to allow the fat to run off but be careful not to puncture it beyond the fat. Roast on a rack, gently, and the skin should crisp up nicely from being air dried in the fridge. I stuff it with sage and onion stuffing. Makes a nice weekend dish, I feel it only serves four, so I cut with scissors along the spine and divide into wings and legs. I wouldn't cook a piece of duck, don't think it would be too good. |

Ok, most would have problems with that much fatty meat. An 8lb duck yields a lot. "When buying whole duck or goose, allow about 1 to 1 1/2 pounds of raw weight per person. Raw boneless meat yields about 3 servings per pound after cooking. Estimate 3 to 4-ounces per person for fully cooked products." So, an 8lb duck pretty much feeds 8. -- |
