Only cooking for 3 people this year. Too bad it's only 10% harder to
cook for 12 people than it is to cook the same dishes for 3. 14.5lb stuffed turkey roasted 3.5 hours right side down, then 15 minutes breast side up to crisp up the skin. Stuffing is Pepperidge Farm, breakfast sausage, celery, onion, mushroom. Roasted and buttered roots - sweet potato, turnip, and beet. Italian sausage and cheese stuffed shrooms. Scratch gravy w/giblets. Deviled eggs. Snap Peas. Pickle assortment - garlic stuffed olives, peperoncini, and habanero bloody Mary pickled beets. And finally, garlic parmesan rolls. I cooked about as much for four people only my bird was just shy of 12 pounds. They especially complimented my from scratch gravy, said it was the best they ever had... started by simmering the poopik and neck... Jilly got to eat most of the poopik and half the turkey neck meat, heart and liver fed the crows. I forgot to take a pic yesterday but I took one of the left over bird ice cold from the fridge this AM, posted elsewhere... not gonna take pics of the sides and I'm positive no one cares. I season by stuffing with carrots and celery plus lemon rind halves in the neck cavity... I do likewise with roaster chickens, adds flavor and moisture. OH, I did two pies (lemon meringue & chocolate cream) and some sides (creamed onions [recipe below}, mashed rutabagas, chestnut dressing) and my one got there early and did the turkey, while daughter & SIL did all the rest - other sides, table decor, appetizers. IT was fun and calm. Yeah, so I'm still gonna make a turkey tomorrow and today I made chocolate pecan and a coconut custard pies. I have had fun cooking and baking all week. Deluxe Creamed Onions (from an ancient Betty Crocker Cookbook) These make the classic creamed onion dish much more colorful and while not sweet, take a bit of the edge off any sharpness in the onions. 1 1/2 to 2 lbs. small white onions or 2 cans (16 oz. each) whole, or two bags frozen pearl onions, heated and drained 2 tbsp. butter 2 tbsp. flour 1/2 tsp. salt 1/8 tsp. pepper 1 1/2 c. half and half 1 1/2 c. shredded carrots Peel onions or heat/cook, as necessary. Heat butter over low heat in heavy saucepan until melted. Blend in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in half and half. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in carrots, and cook 5 minutes longer. Pour sauce over hot onions. |

Also, as Canadians, she is far less expensive than any appointed friend of politicians, I think it's something like 35 cents per year per Canadian. |

Deluxe Creamed Onions (from an ancient Betty Crocker Cookbook) These make the classic creamed onion dish much more colorful and while not sweet, take a bit of the edge off any sharpness in the onions. 1 1/2 to 2 lbs. small white onions or 2 cans (16 oz. each) whole, or two bags frozen pearl onions, heated and drained 2 tbsp. butter 2 tbsp. flour 1/2 tsp. salt 1/8 tsp. pepper 1 1/2 c. half and half 1 1/2 c. shredded carrots Peel onions or heat/cook, as necessary. Heat butter over low heat in heavy saucepan until melted. Blend in flour, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in half and half. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in carrots, and cook 5 minutes longer. Pour sauce over hot onions. |
