Default Recipe request

Â* Anybody got a good recipe for venison sausage ? I've looked at a few
online , and have all the spices used in most of them . I'm looking for
a sage flavor without a lot of heat . The wife spotted 4 deer standing
out in the power line easement/clearing this morning , so I shot one .
This one is destined for sausage and deer burger , maybe some jerky .
Last one is all roasts and a couple of packages of pieces for jerky or
soup/stew . What I do with the next one depends on how this one turns
out ...

review (Grand Opening weekend, IIRC) as well as writing to corporate
about my experience (Oscar + overcharges). Sprouts has never responded
or offered a refund. They'll probably complain about this review, though.

I've always had venison sausage done as summer sausage. It sounds
like you might be looking for something like a breakfast sausage?

Â* I shoulda mentioned I have some fatty sausage to mix with the venison
.. I'm looking more for a suggested spice mix . That pic of a venison
sausage recipe in the 2nd link might work , I'll copy it onto a 3x5 card
for my recipe file (that's MY recipe file , she has her own) . I'll also
be making plain "deerburger" too , One of the guys at the meat dept of
our local grocery is going to hold some beef tallow for me .

Â* Yes , just a plain old breakfast sausage . I need to make an
attachment for my meat grinder to make cased sausages . It's made to
have one , and probably had one when new . But for a yard sale find for
8 bucks ... And hey , I've got a machine shop with a TIG welder and a
supply of stainless steel sheet .

No but I do have some decent venison recipes from 1980
appalachian area.

- Venison Noodle Skillet
- Venison Chop Suey
- Ozark Style Venison Stroganoff
- Venison Roast

Also a few squirrel and rabbit recipes.
If interested, I can post them.

I have an old cookbook of game recipes too but can't find it for
now.

Note: My mom's parents are from the Appalachian area. Generations
of coal miners back when coal miners were living on poverty
level. Even then, they all seemed to have about 10 kids each. ???
All had a large garden that grew all the vegetables to last for a
year. Lots of canning/preserving during harvest time.

A milk cow and chickens and a few pigs. Most of the meat was from
hunting for rabbit, squirrel, deer, turkey, etc. Most times, most
of that game meat went in to various casseroles with noodles.
Damn good food that I remember.

That gramma of mine was the best cook I've ever known. She did
spend almost all day, every day in the kitchen cooking on her
very large cast iron, coal fueled stove. Good memories. I spent
a few summers there.

We used to eat gray squirrel baked often when I was kid, also lots of
venison, rabbit etc., but I really don't eat it anymore. This site says the
best 13 recipes for venison sausage, but haven't ever tried any of them.
