Default Pecan Sandies

I think I got this one from Cheri. D LOVES them))))

Pecan Sandies

Ingredients
1/2 cup butter, softened
1/4 cup sugar
1 teaspoon vanilla extract
1 cup cake flour
1/2 cup finely chopped pecans


Directions
1.In a bowl, cream butter and sugar; stir in vanilla. Add flour; mix on low
until well blended. Stir in pecans; mix well. Chill for 30 minutes.
2. Roll into 1-in. balls; place on a greased baking sheet. Bake at 350° for
15-18 minutes or until bottom edges are golden brown. Cool on a wire rack.
Yield: about 1-1/2 dozen.

Same with my dh, not too sweet but tasty and very easy.

Agree!

Thanks, Ophelia. Looks like I now have an even better reason to turn
on my oven (already on!) and warm this chilly abode. I have all the
'ingrediments' (Brit slang) fer them 'biscuits' (another Brit term),
so am gonna make 'em.

Ummm... Ophelia. What 'exactly' is "cake flour"? Is it like 'pastry'
flour? I have some organic whole wheat pastry flour. Will that do?

Cake flour is super fine sifted white flour.

Texture is the main thing that sets cake flour apart from other
varieties. It is often milled so fine that it is actually soft to the
touch, much like baby powder or powdered sugar. Most of the time, it is

That recipe is a US one so I don't know. I just our regular flour.

I make them often because dh likes them a lot and they are easy to do on
short notice, but I just got the recipe off the net a few years ago.

Cake flour? Interesting! Haven't bought that in years.
