Can't be bothered to check when it was, but think around last spring
or so, someone mentioned pickling pineapple in rum. At the time I put some pineapple slices in a mason jar and added some lovely Appletons Rum I had brought back from Jamaica. Tried half a ring just now - uuuuummm - really yummy. For so little effort, a great return. |

Think I must get back to doing some of both, makes a ready-to-go dessert. |
