How long is a beef roast good for in the refrigerator? If I was to buy a beef

I'm very finicky about how old cold cuts are in m y fridge. I usually wont eat them after two or three days. But the I was wondering, how do I know how long they've been hanging ot in the grocery store cooler before they were sliced. Does staying in one big hunk preserve their shelf life better than being sliced? Or is it just a matter of how fast they go through the meats? I can see things like ham, blogna and roast beef being used quickly, but I often buy things that aren't necessarily sold as much, like cappicola and liverwurst. How do I know if that meat it good when they cut it? |

Doesn't it have dates on it? Should have a "packaged on" and "sell by" date. The most important part is when it was packaged. There was a big to do at one store here and big roasts that they had for Christmas. Apparently some were kept at room temp. too long and by the time people went to cook them, they were spoiled. The store exchanged them either for a higher quality piece of meat or a larger piece. |

Â* I have a thermometer in the window ... actually , we use www.weather.com , but know that the temps here 12 miles from town will vary . A solid hunk of meat will be less apt to spoil than something that's been sliced, exposing more of its surface to bacteria. The slicer blade might not be cleaned frequently enough (even if they follow the health department's rules) to prevent bacterial growth. Refrigeration slows bacterial growth, but does not necessarily kill bacteria. Cindy Hamilton |

My lp collection consists of about 600. Some from the later 60's, a few from the early 80's, but mostly from the 70's. Cassettes and 8-tracks made up another 50 or so. Sadly, back in 1972, I even sold off many lps cheap just to raise money for a surfing trip or two. Good trade at the time but wish I had them now. oh well. |

I still have all my LP's - except the copy of ZZ Top Fandango that I traded for a copy of Some of the Best of The Statlers ... and still have a bunch of cassette tapes and all my reel to reel tapes . There's no sell-by date, since we bought it at the butcher shop, but it was cut from the primal yesterday, so it'll definitely last until tomorrow when we cook it. Cindy Hamilton |

Medium rare, though I had to put my wife's piece under the broiler for a minute since she doesn't like red meat. I cooked it at 450 for a half hour then reduced the oven to 325. Had a probe in the meat set to go off at 125 degrees, Perfect! I was very happy. Had gravy, twice baked potatoes, broccoli and dinner rolls. Happy New Year! |
