Default Roast Beef dinner

Wow.... it was the best roast beef of the year. My wife had picked up a
small prime rib roast, 2 ribs, about 3 1/2 lb. We had it with steamed
green beans and roasted potatoes. It was a perfect medium rare and,
despite having been on sale for half price because it had been around
for a while, it was wonderful. It was a little too small to get enough
drippings to make gravy on that alone, so I added some beef broth.

I have a rib roast in the refrigerator. It's going to sit for around 10 more days. My guess is that it's going to lose about 25% of its original weight. I'm betting that it turns out to be a better roast.
