Tonight's dinner is loosely based on a casserole that I made before. We
really liked that one. This started with a pound of grass fed, organic ground beef. It was browned and the following chopped vegetables were added: Zucchini, carrots, celery. This was put in a baking dish along with cooked green beans and a chopped onion. A small portion was put in a small casserole for the dog. No onion in his. Then a layer of cream of mushroom soup, thinned down with milk. Then a layer of thinly sliced potatoes. Then another layer of the soup. Seasonings were salt, pepper and parsley. Bake at 350 for 1-1.5 hours or until potatoes are done. Dog's casserole is small and has very few potatoes so it's done already. I did cover his with foil but did not cover the larger one. Top with shredded cheese once the potatoes are done and put back in oven until the cheese melts. I used a medium cheddar. I can see this recipe being changed up quite easily. You could use a white sauce, gravy or probably even tomato sauce for the cream soup, or even change the type of soup. Different veggies could be added. Would be a great way to use up leftover veggies instead of putting them in soup which is what I usually do. I should imagine that other meats would work well in this too. It's very good! |
