Default Dinner Tonight 2/4/2018

I baked three loin pork chops. I had one for dinner with cornbread
dressing on the side (I shopped in my freezer) and brussels sprouts.
Quite tasty.

Ours was a boneless rib roast with gravy, mashed potatoes, steamed
asparagus and roasted butternut squash. My wife cooked it but
underestimated cooking time, so it was perfectly for me, but a little
too rare for her taste.

I made soup with the leftover squash.

I was going to make the won ton fried shrimp, but decided not to since I did
have nachos and also pea salad, so just in butter, garlic, and some hot
pepper flakes, they were really good. I haven't had cold pea salad in a long
time and it hit the spot. I am a football fan, and it has been a great game
coming down to the last few minutes and Philadelphia is ahead...for now.

We had my notorious top round 12 oz burgers that we shared with the
cats... we added Sargento provolone and Wishbone Spicy Ranch to ours
.... on crusty Portuguese rolls. Sargento was on sale last week, half
pound packs of sliced, $1.99, got two.
This week whole roasting chickens are on sale, 89¢/lb... may get one
next trip, if there's room in the freezer... JennyO turkey breasts
were on sale last week, 99¢/lb, got two.... I'm not a big fan of
turkey but I couldn't resist a pair of 8 lb breasts... how could I buy
just one? LOL
It'll still be winter here for three months so it's still the time to
put the oven to work... was 1º here this morning, and later in the day
2" of snow, not enough worth plowing, and temps are supposed to rise
to the mid 30s tomorrow so I'm hoping for some melt.
And I still need to get to the split pea soup I planned, three pounds
of peas and a big meaty ham bone from New Years. I had trouble
finding dried split peas this winter, don't really know why but got
lucky at BJs. I was really looking for whole dried peas but those are
typically impossible to find here, used to find them at the Hispanic
markets on Lung Guyland... whole dried peas make a much tastier soup,
yellow peas make a very nice soup.

I made two batches of rice. One brown, one white. Salad with asst. greens,
mini peppers, cucumbers, tomatoes, kidney beans and cheese cubes. Also small
steaks, pan fried in a little olive oil and Chef's salt, finished with a
touch of butter.

Tossed salad. Beef stew. He had his over egg noodles. I sopped up
the gravy with a slice of bread.

It was very nice to have the stew ready to eat when I came in from
snowblowing. (You can gloat now. It's ok.)

How do you make your pea salad? I had some in a restaurant in Leavenworth,
WA some years ago. It was super good but I can't remember what all was in
it. I also had some at a potluck that was made with thawed frozen peas and
bacon. It was good too!

I was going to make the won ton fried shrimp, but decided not to since I did
have nachos and also pea salad, so just in butter, garlic, and some hot
pepper flakes, they were really good. I haven't had cold pea salad in a long
time and it hit the spot. I am a football fan, and it has been a great game

I butterflied a (approx.) 5 pound chicken, stuffed compound
butter (rosemary and shallot) under the skin and draped the
chicken over a pile of quartered redskin potatoes with a few
sprigs of rosemary, salt and pepper. While the chicken roasted,
its drippings "basted" the potatoes. Steamed green beans were
the side. Canned, No Sugar Added Sliced Pears for dessert. The
chicken carcass, neck and wings (removed before roasting) are now
simmering away to make stock.

That's basically what mine is, thawed frozen peas, some crisp bacon, finely
chopped onion, a couple of hard boiled eggs chopped, salt, pepper, and a
very tiny bit of mayo to pull it together.

Thawed frozen peas, some crisp bacon, finely chopped onion, a couple of hard
boiled eggs chopped, salt, pepper, and a very tiny bit of mayo to pull it
together, nothing fancy at all, it's how my mom used to make it and takes me
back.

I don't think the texture of thawed frozen peas goes well with the
texture of cheese, both too similar/mushy. I think the flavor of
bacon is too overpowering, I think diced ham may be nicer. I'd add
finely minced celery for crunchy texture. I'm not inclined to add
chopped boiled egg, I think the yolks would disintergrate into slime.
Actually I don't think thawed frozen peas is the makings for a salad.
I think freshly picked hulled peas from my garden would be much better
in a garden salad but more as a garnish than a major ingredient.
