Default Mexicanish dinner

We got lucky here in Bothell. Only a dusting of snow in a few areas. I don't
think we got any here but my friend in Marysville which is perhaps an hour's
drive from here depending on traffic got 13"! It is cold though so hot food
it is!

I cooked some brown Texmati rice in beef broth, first toasting it a little
bit in olive oil. Then I added cooked ground beef, Rotel tomatoes, small can
of tomato sauce, can of black beans, can of corn and also chopped, cooked
green pepper, orange pepper and white onion. Seasoned with a little salt and
pepper and plenty of chili powder. I put it in the oven. Timer is going off
now so need to check it.

I left it a little liquidy on purpose because it might be in the oven for a
while. Not sure when the gardener will get back but he got a late start so
could be late. Will switch oven down to low to keep warm. Will top with
Mexican shredded cheese before serving.

Dog will get only the the bits that are safe for him. I took out small
amounts as I cooked the stuff. No chili powder in his. Just oregano.
