Default Dried White Fungus???

Picked up a new item at the thai store tonight to try...
I'm adventurous about foods and there is a LOT of stuff at that market
that is still new and different, as well as being low carb and low cal.

Anyway, it was over with the dried shitakes. It's a bag that says "dried
fungus" and when I asked the cashier, she said it was called white
fungus.

They are some sort of dried mushroom that looks a lot like a coral
mushroom. Thin and crispy looking little wavy things. I've not tried
them yet but I plan to try reconstituting with water first, then go from
there.

Anyone ever heard of anything like this or have any preparation hints???

I believe what you have there is Tremella fuciformis. When I first saw
these dried in the pack I thought it was Sparassis crispa or the cauliflower
fungus. I was told that was not the case. Do a search and you will find
some recipes. It also has good medicinal properties. I also encountered a
PDF on its cultivation and apparently it can not digest cellulose or lignin
very well so it needs to be in a mixed culture to fruit properly. Thought
that was pretty interesting. I have seen your posts on your oyster
experiments so I thought you may be interested.

You might want to think twice about the shark fins. Most of them come from
commercial boats that catch large numbers of sharks, cut the fins off, and
throw the shark back to slowly die. It's a bit too cruel and wasteful for
me.

Thanks for the good word on the Shark Fin, Pete. While I don't love sharks,
their numbers are on the skids due to overfishing for the "fin" industry.
Anything is good in moderation, but this is extreme.

Thanks for the good word on the Shark Fin, Pete. While I don't love sharks,

Thanks! Excellent link...
But is it possible to cultivate from a dried specimen?

I did google and find some recipes. It looks like it's going to be
interesting! I will probably try miso soups as well as reconstituting
one or two for stir fry.

My sil recently went to a very fancy Chinese wedding, they had
shark fin soup. When I told her about the practice that Peter
mentioned, she was horrified. She will never have that again.

Sweet fruit soup with white wood ears

1/2 oz white wood ears
6 cups water
2/3 lb rock sugar
canned fruit with syrup

Rinse wood ears; add hot water to cover. Soak until expanded; remove
stems and drain.
Place wood ears, sugar and water in a saucepan; steam until sugar has
dissolved.
Allow liquid to cool and remove wood ears. Refrigerate liquid.

Place wood ears, canned fruit with syrup and cooking liquid in a large
bowl, adding ice if desired.

Serves 12

If you ever do try it - imagine yourself starving and suffocating cause
you can't move or breathe, and maybe you'll think twice about it.
Because that's what happens to the sharks when they are caught, have
their fins cut off, and then are tossed back in the ocean to die.

Well perhaps someday someone will cut off your arms and legs. Then put a
heavy weight on top of you so you can't breathe at all. Perhaps then you
will understand how the sharks feel - as you suffocate and starve to

Well perhaps someday someone will cut off your arms and legs. Then put a

thing because they said "fungus", but if they'd been called

was familiar with on the usual store bought edibles... Sometimes the
orientals will not call something by the same name that we do!

Even the dried Shitakes are not labeled "Shitakes".
Fortunately, I was able to recognize those as such.

A lot of the packages in that store are labeled in chinese, and I can't
read that so I have to hope that one of the cashiers speaks enough
english to help me identify what I'm buying if it is something I am not
familiar with. It does not always happen and even the managers are
sometimes clueless so I end up on my own. A picture is not enough to
even use for a 'net search.

As I've gotten older, I've gotten more adventurous about new foods! A
necessary thing if I want my diet to be interesting now that I've had to
give up wheat, potatoes and rice. :-P Do you have _any_ idea how much of
the american diet is based on Wheat or wheat products???

The Thai market in Austin is rich in untried delectables and I have a
LOT to learn about them.

And I adore mushrooms! :-d

Blair,

I'm not overly fond of sharks myself, but making ANY creature suffer a
slow death for a specialty food item is wrong!!!
They should be killed before removing a body part...
