I just heard that the place we all get our vanilla from has had big problems
with it's crops and now vanilla is the same price as silver!

My last look at silver had it at about $16.+ an ounce.

causing the price to skyrocket. I wonder whether it's true or growers
have just agreed to raise prices. Vanilla is grown in so many places
it's unlikely all crops would fail at once.

For most uses modern chemistry has produced vanilla flavoring that
can't be distinguished from real vanilla... nowadays it's silly to use
real vanilla in dishes that will be heated, save your real vanilla for
icecream, whipped cream, and other cold usage.
I have enough real vanilla to last the rest of my life, about a quart.
Years ago pure vanilla extract was rather inexpensive so I stocked up
becasue back then with kids around I did a lot of baking and they
loved tapioca pudding. Back then vanilla flavoring left a metalic
after taste but not anymore.

It was discussed her recently. Vanilla prices have been soaring for more
than a year because of a shortage in Madagascar, where 3/4 of the
world's vanilla is produced. It takes three years for an orchid vine to
grow beans, so even if produces planted more crops it will take that
long before the supply increases. The market is very volatile and they
may not be interested in expanding production if they are expecting the
market to crash.

I read an article a couple months ago about the increasing number of
thefts of vanilla beans. Some farmers are picking the beans before they
fully mature because they are afraid that if they leave them to ripen
thieves will grab them.

We've seen vanilla growing in Thailand, Mexico, and Zanzibar. Any
tropical climate where orchids grow will suit vanilla vines, too.

That's because the flavor of imitation vanilla is unaffected by heat
and the flavor of real vanilla is affected.

Perhaps, but *IF* it has exactly the same molecular structure as
vanillin, who cares, even if it was made from a turd dipped in crude oil?

Of course, there are other flavinoids in vanilla, which give it a taste
some can distinguish, but vanillin is the main contributor.

Petroleum is used to synthesize many, many things, because it is a
hydrocarbon and an ideal starting point.

So you also don't mind that there's human hair in McDonalds and Burger

I've bought a quart of imitation vanilla flavor because it was dirt cheap. For some reason, I dumped the stuff down the drain. I don't remember why. My guess is that I needed the container.

A lot of it comes from the pulp wood processing. For about a yer I lived
in a small city that had several paper mills and we frequently smelled
vanilla in the air.

My commute back in the late 80's took me past Everett, Wa. The paper mill operating there put out a unforgettable organic smell. I can still remember how it smelled. It was awful.

Really?! I can remember travelling across the US as a kid and when we'd
drive through an area with pulp mills we had to roll up the car windows.
It stunk to high heaven and certainly did not smell like vanilla.

The biggest user of fake Vanilla is (or was) sewage treatment plants -
to help mask the smell. Perhaps the pulp mills were doing the same.

In fact, some cheap wines and sherries are made by pumping the juice
through a bag of oak chips.
