Not sure what to call it...sliced mushrooms with garlic and stuff cooked with wilted spinach.
Sound good?
I love it. Takes me back when I was a kid.

My roomates like it too.

Onions go well with mushrooms but I don't think mushrooms would go
well with spinach, the strong flavor of spinach would clash with the
more delicate mushroom flavor.

I think pretty much anything like that cooked with wilted spinach would be
good.

I love spinach. Not a fan of mushrooms but garlic & spinach are a great
combination.

Eggs go very well with wilted spinach. A couple weeks ago we had
breakfast at a local restaurant and I had Eggs Florentine. I had had
them a couple times in the past when they were not great, but this time
they were wonderful. The first time I had then I was a kid and not keen
on spinach. The next time was about a year ago and they used a sort of
cheap commercial grade Hollandaise with bits of spinach. That was better
but not great. This time it was real Hollandaise and wilted spinach and
it was delicious.

So is mustard seed a match! Sounds odd at first but try it in limited
amounts.

I tend to blend the more pungent black with the milder yellow. I'd aim
more to the yellow for this delicate dish.
