I agree with all the rest, but "cheddar"? I realize the longer cheese
ages, the more salty it becomes ("real" 2 yr old parm is incredibly
salty). Still, I've been trying to limit my cheese intake. I woulda
subbed so-called American Cheese before cheddar, in this warning.

my kids like to watch people playing video games on youtube, so they
are basically wasting their time watching someone else waste time

I should have a youtube channel of my kids watching people play video

Salt is fine for you. The Japanese eat a ton of it and they live the

Sure cheese contains fat, but majority is saturated fat, not unstable
polyunsaturated fats that are common in cheap cooking oils. Eat too much of
anything and youll gain weight.

Bringing up cholesterol is the most ridiculous, the body produces a
majority of it and doing things like eating excess fructose will cause
blood level rises of LDL. Why its even listed anymore in nutrition facts
is beyond me:

food. They also eat more tofu. Etc, etc. It's hard to say what causes
what.

Fair enough. I doubt this single element affects longevity that much. I am
merely stating excess salt is unlikely to cause stuff like cardiovascular
disease.

Except no, thats not at all what increases bad cholesterol. If you consume
excess calories in fat and then add excess carbohydrates on top, the body
converts the excess *carbohydrates* into fat through de novo lipogenesis
which is an inefficient process generating LDL cholesterol.

Not all GPs read new research. Also, nobody likes to admit when the advice
theyve been handing out is incorrect. Much easier to just double-down on
it.

Australias Heart Foundation? They have a page on saturated fat and trans
fat. Artificial trans fat is bad and nobody will argue otherwise. They also
have a page which talks a lot about proportional change, notably saturated
fat might even be seen as a neutral (can swap in carbyhydrates and not have
a change in CVD):

They say there that:

-It's best to reduce saturated fats and replace them with unsaturated
fats.

-It's good to reduce saturated fats and replace them with wholegrains.

-It's no improvement to reduce saturated fats and replace them with
refined carbohydrates.

That tells me to continue taking it easy with saturated fats.

I like queso fresco but don't use it very often. I love cheddar. I'm
not worried about salt and my cholesterol levels are fine. One word in
that scare-monger video made sense: moderation.

to look up fear-monger videos, even if they are food related.

Whew! Brie wasn't on the list of "bad" cheese in nb's link! Good,
because I love brie. It's about the only cheese I could be accused of
over indulging in. I saw something on 'The Chew' yesterday. I don't
usually watch this show since I find the people annoying. They try too
hard to be cute. But I was flipping (TV, not Youtube) channels and the
mention of baked brie made me stop and watch. Now I've found a link on
Youtube (see how I circled back to the youtube and cheese topic?):

the strawberry jam but you know me, I don't really have much of a sweet

scored around the sides of the bread bowl so it would be easy to pull
apart for snacking. Mmmm, hot crisp bread and melted brie sprinkled
with a little thyme, baked, comes out in easy pull-apart bites. Sounds
good to me!

Phew. Me too. I am lactose intolerant so I never was much of a cheese
eater. After the heart issue I was told to cut back on cheese and
especially the soft, unripe cheeses. Brie is the one cheese that I
really have a hard time denying myself. It is my number one favourite.
It doesn't even have to be a special Brie. Just about any Brie works for
me.

OMIGOD that looks good! I love Brie and buy it occasionally (since I overeat
it) from Costco. I will definitely try this, the only thing I would change
is the jam, I would use apricot or even marmalade. Thanks for posting this,
I would not have thought of it.

It really does look good. It's the start of an idea with bread and
brie! I really like the way he slices the boule so it's easy to tear
off single serve bites. Heck, the whole thing is easy. Looks delicous!

Hmmm... I don't know. Many years ago there was a Danish restaurant in
the city we lived in, and one of their desserts was deep fried Camembert
that was served with strawberry jam. It was delicious. When I was in
Denmark I had a similar thing bu, but baked in puff pastry and served
with blueberry jam, also delicious.

Ah, but this is so much easier than messing with sheets of buttered
phyllo. They made that comment during the show. I love what you're

If you ever make bread, a brioche dough works well for encasing brie.

I found phyllo to be quite intimidating the first few times I used it.
It is nowhere near as tricky as it appears to be. You just have to be
organized and to work quickly. It doesn't really matter if the phyllo
tears a little bit.

We had a recipe for salmon fillets wrapped in phyllo that was
delicious, but we have not done it in ages. It was pretty simple. It
involved layers of buttered half sheets of phyllo sprinkled with sesame
seeds. Lay the salmon fillet in the middle of the top sheet, top with a
little chopped onion, some fresh dill weed, a little orange juice, wrap
it up, more butter on top and a sprinkle of sesame seeds.... bake.
