I found this while cruising U2B:
https://www.youtube.com/watch?v=Ord6exhq8uQ I agree with all the rest, but "cheddar"? I realize the longer cheese ages, the more salty it becomes ("real" 2 yr old parm is incredibly salty). Still, I've been trying to limit my cheese intake. I woulda subbed so-called American Cheese before cheddar, in this warning. ![]() nb |

Also, nobody likes to admit when the advice theyve been handing out is incorrect. Much easier to just double-down on it. Australias Heart Foundation? They have a page on saturated fat and trans fat. Artificial trans fat is bad and nobody will argue otherwise. That tells me to continue taking it easy with saturated fats. |

I like queso fresco but don't use it very often. I love cheddar. I'm not worried about salt and my cholesterol levels are fine. Whew! Brie wasn't on the list of "bad" cheese in nb's link! Good, because I love brie. It's about the only cheese I could be accused of over indulging in. I saw something on 'The Chew' yesterday. I don't usually watch this show since I find the people annoying. They try too hard to be cute. But I was flipping (TV, not Youtube) channels and the mention of baked brie made me stop and watch. I am lactose intolerant so I never was much of a cheese eater. After the heart issue I was told to cut back on cheese and especially the soft, unripe cheeses. Brie is the one cheese that I really have a hard time denying myself. It is my number one favourite. It doesn't even have to be a special Brie. Just about any Brie works for me. |

I don't know. Many years ago there was a Danish restaurant in the city we lived in, and one of their desserts was deep fried Camembert that was served with strawberry jam. It was delicious. When I was in Denmark I had a similar thing bu, but baked in puff pastry and served with blueberry jam, also delicious. |

It is nowhere near as tricky as it appears to be. You just have to be organized and to work quickly. It doesn't really matter if the phyllo tears a little bit. We had a recipe for salmon fillets wrapped in phyllo that was delicious, but we have not done it in ages. It was pretty simple. It involved layers of buttered half sheets of phyllo sprinkled with sesame seeds. Lay the salmon fillet in the middle of the top sheet, top with a little chopped onion, some fresh dill weed, a little orange juice, wrap it up, more butter on top and a sprinkle of sesame seeds.... bake. |
