Made Quick Swiss Chard Supper over mashed potatoes. Did not have enough of any one kind of potato for mashed. Went to Costco. They were out of instant and didn't want to buy potatoes in the quantity they sell. Tried Target. They only had red which IMO are not the best for mashed. They also didn't have any plain milk in a smaller amount so... I bought the "new" Archer Farms made up ones. They seemed a bit salty. The salad I made was odd. It was roasted tomatoes and cooked green beans over greens with Feta and Balsamic glaze. The taste was fine but I couldn't get over the texture of the tomatoes. Also seemed like it needed crunch. I added walnuts. That made it some better but I doubt I'll make it again. Was just trying to use up some of my tomatoes and thought I'd try something different. And it WAS different! |
