Yesterday, i spent most of the day making two large pans of lasagna, one for us, and one for the really nice people at PHYSICAL THERAPY. It was delicious, they loved it and so did we !

Best Lasagna I ever had was when I was visiting Buffalo a couple months ago at a place called Mulberry's, after I saw it on "Diner's Drive-in's and Dives". The Lasagna starts at about the 3:45 mark:

I've tried to recreate it but was not even close to the New Orleans dish. There are a lot of things you could layer between those luscious noodles that would probably be quite good. I've tried using the "no boil" noodles in order to cut back somewhat on the total effort and the texture was too mushy. Then I just used the standard dry noodle and made the layers without boiling the noodle first and it worked perfectly and had good texture. Made the sauce a little juicer than normal and held overnight then baked. jay |

I grew up very close to Louisiana and have been eating those things since I was a small child. In the lasagna they are somewhat disguised in a gumbo kinda sauce. UMMM good!! And there are peeled of course son you don't even have to suck on the heads. Lobster should be awesome also. Not tried that one but willing. |

It sounds downright tasty. It's one of the few recipes on RFC in recent years I've saved to try. I don't have to have to wait for x-mas, do I? However, any white, delicately flavoured fish could be used. |

Not that I care. > IME yes. I remember seeing the crayfish catch coming in to Yanchep, north of Perth and buying a big bag of crayfish legs. I was told that a lot of the crayfish tails were exported to the US where they appeared on "surf n turf" platters as "lobster tails". |

Thing is, I don't order surf & turf and don't eat in restaurants very often anymore. I enjoy cooking. Crawfish tail meat that I know of is different from the Australian "lobster". Not sure I'd use it in lasagna but I re-created a dish called 'Catfish Acadian' after having it in a restaurant in Memphis. The crawfish was used in the slightly spicy sauce. It's different, small and sweet. You don't have to buy them whole. They're pretty darned ugly when they're whole. So are shrimps. Jill |
