Default Beet season

Knowing how much ya'll like beets, I thought I'd pass this video along
to ya'll:

My wife absolutely hates beets. We went to a wedding last Friday and
there was beets in the roasted vegetable medley. It was the first time I
had had beets in years and I thought they were delicious. I wondered
what her response would be. Next thing I knew she was passing me her
beets. She wouldn't even try them. Pity. They might have helped to
change her mind about beets.

I got me two lrg bunches of luscious beets. I'll cook the greens, tonight, and
think about what I'm gonna do with the roots. Probably, pickle 'em.

My son never had beets when he was a kid. I had no problem with them,
but my wife hates them. It is one of the few things she will not eat.
So I was surprised to discover when my son moved back this way that he
had developed a taste for pickled beets. He loves them.

My mother had one of those large Burpee canner/pressure cookers. I can
remember her pressure cooking a huge batch of beets, I guess to pickle.
After they had cooled she called me in and two girlfriends visiting (we
were about 12-14 years old) and asked us to wash our hands and then get
our hands in that huge pot and rub those beets. I don't think it took us
more than a minute or two to skin those cooked beets and we thought it
was great fun.

I love the taste of beets but they seem hard for me to digest so I don't eat
them often.

My wife and I once juiced beets from our garden and had a big glass of
pure beet juice each. We were both sick as a dog for 2 hours. I still
don't know why. Too much of a good thing maybe.

Never cared for regular beets, but my wife makes a simple salad with
pickled beets I like. Drain the juice, then just add some onion, olive
oil, oregano.
