I picked up some because I had a spare $20 in my wallet and there was a guy holding a sign just off Natural Bridge, and it was a warm sunny day and I spoke with him a moment while I was in the traffic line, and after the light turned green (I talked to a Stranger who then became my friend!) I pulled into the small stripmall parking lot and went in! I think it's JML Donuts? John Kuthe, Climate Anarchist and Donut Connoisseur! |

I would make the apples first, maybe giving them a rough chop like 1/2 " to 1/4" putting them in a skillet on a medium low fire adding sugar cinnamon and nutmeg... I dont really know how much I just add it... perhaps a little more cinnamon than nutmeg though. and maybe twice as much sugar as cinnamon.. maybe three times as much and I just let it cook until the apples are soft. I use gluten free pancake batter (bisquick) mix it up so it is quite thick by using less milk that recommended, I also add a good bit of sugar to the mix. then I incorporate the apple and spices into the pancake batter, I would not stir it, rather gently fold it. Then spoon some of the batter apple mixture onto a piece of wax paper then put it in an air fryer or an oven until it has browned. While that is cooking I will make a glaze with powdered sugar and milk mixed in a hot skillet... very little milk is needed. then coat the finished pastries with the glaze and you are done -- ____/~~~sine qua non~~~\____ |

Apple fritters are even better dusted with powdered sugar. There was (is?) a restaurant
in Oklahoma City named "Apple....something." No, not Applebee's. (The time I had dinner there, a favorite menu item was New England Pot Roast.). As soon as you were seated and your order given, waiters would come around with baskets of hot, fresh apple fritters to snack on while waiting for your dinner. They were SO good. They were the type of fritter made like yours, christ, with diced or grated apples mixed into a batter, then fried. I have seen recipes for apple fritters that are sliced whole apple rings coated with batter, then fried. That isn't something I think I would like. N. |

When seated at the restaurant they bring a basket of apple fritters with apple butter and a small glass of apple cider to your table to snack on while waiting for your dinner. They are addicting and gladly share their recipe for the fritters. |

We used to get them at local Pioneer Days festival. I would gladly line up and wait for those things. I went to another local festival and waited in line only to be disappointed by globs of fried batter with apple chunks. Somewhere along the line we bought a deep fryer and once a year, during apple harvest time, I would make a batch of apple fritters, apple slices cooked in crispy rings of batter. Even better than icing sugar is cinnamon sugar, and maybe some maple syrup on the side. |
