I don't think there's a direct equivalent as such, not using mayo,
mustard and that sort of thing. Asians don't use those ingredients
much.

btw I asked if India is considered part of "pan-Asia" and was told no,
and I assume Russia is out as well, so this version of Asia is quite a
bit short of being truly "pan-"

You probably wouldn't like the way the Chinese treat eggs - they just cook the shit out of their poor eggs. I suppose you could cook the eggs to a medium soft boil and make deviled eggs using Japan mayo. I can't say how pan-Asian those deviled eggs would be but that's the way I do it and I am sorta Asian with pans.

I almost never follow a youtube link without knowing what's there but
in this case I made an exception. Of course by the time I was 45
seconds into it I had already got the message several times that people
in LA are obsessed with these sandwiches. I didn't get much further.

oh yeah btw people in Seattle loved my asian-inspired deviled eggs

I marinated the hard boiled eggs in approx 1:1 soy sauce:rice vinegar
with a bunch of grated ginger

the yolks were combined with mayo, rice vinegar, grated ginger, a
little sesame seed oil, and chopped green onion

next time I'll add sesame seeds and maybe garlic
