Default Ping: Wayne Cranberry Fig Chutney

Wow! Thanks for this one! I just made a batch and it's fabulous! My
hubby is going to faint when he sees the dent I made in his new bottle
of Laphroaig; but it was well worth it. The stuff is awesome!

While the thanks are going around, did I ever thank you for the pinapple
upside down cake recipe? I had been searching forever for a pineapple
upside down cake recipe like the one my mother used to make, but none of the
ones I tried ever came out right. But yours was perfect! I even told my
mother about the fabulous pudc I made and she said, "Did it use a sponge
cake, like mine did?" If only she had told me about the sponge cake part
earlier...

So, thanks for the recipe, and I'm making it again this weekend!

Hi Rona!

I remember well our discussion about the pineapple upside down cake. The
last I knew, however, you were still trying to find a pan to bake it in
that would also fit properly in your oven. I'm so glad to know that it
obviously worked out. What kind of pan did you end up with? It pleases me
no end when I find out that someone really enjoys a recipe I've passed on
to them.

Your note has made me want a pudc right now! I'm making a batch of
mincemeat today, but I think I'll bake one to tomorrow.

I used a pyrex pan--I think it's around 7x11 or 8x12. Something like that.
I figured out the volume of a 10" pan and picked the pan I had that was
closest in volume. Actually, I used the pyrex plus made two or three
muffin-sized ones, only to realize that I didn't really need to make the
muffin-sized ones. There was more than enough room in the pyrex for all the
batter, but at least I had three little ones to munch on before my big
dinner! :-).

I'm just about to start making it--I'm bringing part of it for someone's
birthday tomorrow. The rest goes to me me me me me!! (And I wonder why
I've not been losing weight recently...)

Well, I'm really glad you found a solution. Actually, I have sometimes
baked the whole lot as individual cakes. I use large custard cups, the
size where a pineapple ring just nicely fits the bottom of the cup. They
turn out quite nice.

I have to admit that I sometimes make a dessert just for me. Worse yet, I
have a really hard time spacing out eating it! Funny, I notice the same
problem as a result. :-)

Well, I'm really glad you found a solution. Actually, I have sometimes
