You can see in the picture the eggplant alfredo that I fried in my
airfryer. For the batter I used a couple of eggs, salt, paprika, sriracha sauce dipped my eggplant in there then coated it with a gluten free flour. Then air fried it for about 25 minutes at 320 f then 5 mins at 400 f. Made a Parmesan alfredo with simple soy noodles. Instead of parsley in the alfredo sauce I used garlic chives.
