I may have been the one who gave you the idea of cornmeal dumplings,
leo. I remember posting about making chicken stew with cornmeal
dumplings. It's not something I grew up eating but hey, apparently if
you live in the South long enough you'll wind up making cornmeal
dumplings. It's not 100% cornmeal, of course. Half flour, half
cornmeal. I liked them but don't expect the texture to be anything like
fluffy Bisquik (or from scratch) drop dumplings. They were very tasty.
I should make cornmeal dumplings the next time I make chicken stew!

When I used to make them, I used regular flour and dropped them from a
spoon.Of course you can only cook a few at a time this way because you want
them to be evenly cooked.

That's how we make our nockedli dumplings. Also a good dumpling mix is Panni Bavarian potato dumpling mix.

That would do it. I have one of those special spaetzle gizmos with the
hopper that slides back and forth over the grate. They can also be
sliced. I remember Emeril, or maybe it was Mario, making them by
rolling them out and cutting them into squares and diamonds. My friend's
mother used a stiffer batter and would put it on a board hanging over
the boiling water and slice off thin strips and they would fall into the
water.

Don't know how that would work in the UK. We used to make them, stuffed with prunes or bacon, or have them with roast meats. Alongside Chicken and Dumplngs, I don't know 100%, but am pretty sure it would be a good thing.

Spaetzle??????????????????????????? Spaetzle are small, very small and are
all cooked at the same time then usually finished in browned butter.

Great! Now answer my question if cake flour would be ok to use instead of
plain flour. Cake flour has less protein and since these will pretty much
cook in a flash I'm thinking they'd be ok??? Or do you think the spaetzle
police will show up at my door?

Household flour in Europe is softer than our AP (at least that in the
northern US and Canada) so I reckon cake flour would work. Anyway, it
won't cost much to find out.
