Default Chopped/ground sirloin

Bought some at Winco today but did not see it at first because it came in
chubs. I rarely buy food in chubs. I asked the butcher and at first he told
me that it was the same as lean ground beef. I don't think so as it doesn't
taste quite the same. Then he saw the chubs. Am starting to think the meat
people at the Everett location don't know their products. Last time I was
told that the Carne Asada was organic steak. Same guy couldn't answer
another person's question about pork product.

Looking online was no help as there were so many conflicting answers.

So... What's your take on what this meat is?

I've got your answers, Julie because I asked a butcher that I
know well.

The ground any beef that is sold in chubs, comes from somewhere
else. The do a "1st grind," pack it in chubs and ship it off to
grocery stores. When you buy a "chub" of beef, usually on sale,
this is what your are buying and what the grocery stores always
get. They don't do anything but resell what they bought. When
you see beef in a tray on shelves, they have taken those chubs
and run them through a 2nd grind...refining them a bit.

Both lean ground beef and ground sirloin are lean but the sirloin
has a better flavor. Ground beef can be any part of the cow.

Best hamburgers I ever cooked was 2nd ground sirloin from a
specialty store.

Â* The ribeye steaks we last bought turned out to be kinda tough ... so
last week I thawed a couple (frozen in pairs) and ran them thru my hand
cranked meat/whatever grinder . I used the meat for "chopped steak"
sandwiches , loose meat with onions , shrooms , etc on home made hoagie
buns . Made 5 sandwiches from those 2 steaks .

It's been years and years and years and years since I bought ground beef in a
chub pack. If it's the same as what's in the tray why is it hidden in plastic
where the meat cannot be seen? The last time I bought it, it was simply terrible
and I returned it as to me, it was not fit for human consumption.

I have no idea. If you didn't know what it was and the butcher couldn't
answer your question, why did you buy it?

I have seen this pink slime in those chubs. It's some very funky stuff. I have seen pink slime on the Beyond Burger in the meat case. It might be that pink slime is an important part of the hamburger experience.

A slightly better grade than dog food.
There is absolutely no logical reason to purchase preground meat, not
even to feed your dog, other than people are lazy and grossly stupid.
Most supermarket chains make up their own ground beef at a central
location that delivers to their markets, it's ALL mystery Meat.
Those huge meat grinding facilities grind by the ton and form pattys
for the fast food industry and for packing as chubs to be sold at
market to the Public... it's ALL Mystery Meat.
We're having burgers for dinner tonight, from top round steaks I
ground myself. We prefer very lean burgers but if we wanted fattier
it would be a no brainer to grind in some chuck roast.
It took me less than ten minutes to grind about 8 pounds, and another
5 minutes to clean up. Took longer to make up the patties, wrap and
freeze, but yoose still gotta make up patties with mystery meat.
The only reason that people don't grind meat themselves is that they
are too lazy and stupid.
One of the best places to buy meat grinders is at Cabelas.

Â* Mine too ! BUT I was chatting with the butcher today while I was in
picking up some country style ribs and pork steaks and a couple of pot
roasts . He was saying that the last batch of ribeyes they got in for
the big sale were on the tough side . That's OK though , the KC strips
bought that same day are very nice .

What I had was just plain old, everyday hamburger. No special grind but LOTS
pieces of gristle and silver skin. Sh-h-h-h-udder. The lady in the meat
department seemed rather offended that I returned that mess. I told her if
she can't see all those chunks of gristle and silver skin then she needs to
quit calling herself a butcher.

This was truly disgusting and that's why I returned it. I still say it's just
garbage meat. Why not pack it in a Styrofoam tray so people can see the
meat? By the way, the stores around here sell the first grind, chunky but
it doesn't impress me enough to want to buy it. But at least it's under
clear plastic wrap and the meat can be seen.

As Sheldon would say 'mystery meat.'

I understand your concern. OTOH, you'll probably see meat sold at stores that don't have a meat department. Places like Target and Tesco. I believe it to be the future of retail meat. OTOH, meat is probably seeing it's final days.

Pre-packaged meats are a reality at these places already. These meats are packaged somewhere else and frozen. They're defrosted at the point of sale. It's kind of a nifty concept. I can't say how good the merchandise is.

Pretty sure I bought frozen pink slime once at Walmart. Not sure if it was
in a chub or not. This was before I had ever heard of pink slime. I began
cooking it. It looked weird so I tossed it.

That's not what I said. He told me it was just lean ground beef. Wrong! Then
he found chubs labeled as Ground Sirloin. So I bought them.

Agree. The feral hogs seem to be a real problem in many places of
the southern US and even in Hawaii. They are breeding faster than
they get killed.

Pig hunting is a popular tradition on this rock. The hunters do Hawaii a valuable service. OTOH, I'm not going to become a pig hunter and run through the jungle to bag and butcher a pig nor will I grab one of the many chickens or cats conveniently located in our parking lot for a little meat. No doubt some people will but most people are going to eat whatever is available for them as long as it does not involve them making an animal bleed. Like I said - enjoy meat while you still can. I certainly do.

I bought a 3 lb chub of meat yesterday to see what all the fuss is about. OTOH, I've prepared Mexican chorizo so I have a high tolerance for pink/orange slime. I'm thinking about cutting off the plastic around the chub and cooking the whole thing as a meatloaf. That would be pretty cool and revolting at the same time.

Not as long as there are deer , squirrels , and rabbits in my woods .
Feral hogs are in our area too , and those who are afflicted with them
WELCOME people that want to harvest them .
