Default Vegetarian chili for dinner.

I am working my way through my canned goods and will restock with fresher
ones before winter hits. We are eating far less canned stuff and more fresh
but I like to keep it in case we get snowed in.

I got this recipe from a magazine years ago but I always add more stuff.
It's a good way to use up veggies.

3 cans beans (different kinds)
1 can corn
1 jar salsa

Drain the liquid or not, depending on how thick you like your chili. I used
a smaller jar of salsa this time. Just mix, heat and eat.

Tonight, I added chopped fresh tomatoes (the last from my garden), a small
chopped onion, about a Tablespoon of cocoa powder and a goodly amount of
chili powder.

Served with some sharp cheddar, sliced green onions and cilantro on top.
Yum!

I haven't made that in a long time. Seems to me that there is also a
recipe for a dish called 'White chili'? I've got to do some of those,
I've gotten into a rut.

The doctor has me on a fat and sodium restricted diet. After 2 1/2
years of adjusting and simplifying this is the one I've come up with:
Meatless Chili
1 1/2 cups red kidney beans
1 1/2 cups small red beans
1 1/2 cups baby lima beans
beans 15 mg sodium
3 Tbsp homemade chili powder* 0 mg sodium
*or
8 tsp chili powder
1 tsp garlic powder
1 tsp oregano
1 heaping tsp cumin
* 640 mg sodium

12oz bag cajun mirapoix 140 mg sodium
2 28oz cans crushed tomatos 520 mg sodium
1 4oz can diced jalapenos 20 mg sodium
1 11oz can low sodium V-8 200 mg sodium
1 tsp liquid smoke 0 mg
sodium
2 tsp lime juice 0 mg sodium
1 tsp turmeric 0 mg sodium
1 cup water 0 mg sodium
total 895
mg sodium
*or 1535 mg sodium
makes 10 1 1/2 cup servings about 90 * or 154 mg sodium per serving

* Homemade Chili Powder
1/2 cup 8 Tbs paprika
1 Tbsp oregano
2 Tbsp cumin
2 Tbsp garlic powder
1 Tbsp onion powder
1 tsp cayenne pepper (or to taste)

Makes just over a cup



Chili, No Salt Added

Ingredients
1 lb hamburger 300 mg sodium
2 28oz cans crushed tomatos 520 mg sodium
1 11.5oz can V-8 200 mg sodium
1 12oz bag cajun mirapoix 140 mg sodium

I agree with you, too. No place except perhaps Mexican restaurants calls it
chili con carne. Its just chili, and it almost always has meat, unless
otherwise specified that it doesnt.

I make that one regularly during the winter! Its perfect on a snowy day.
The recipe I use works equally well in the crockpot or on the stove.

I dont like to make it too spicy, but it does have chopped mild green
chilis in it (not jalapeños). You could leave them out, but the flavor is
inherent to the recipe. Without them, it would pretty much be chicken and
bean stew.

I dont like to make it too spicy, but it does have chopped mild green
chilis in it (not jalapeños). You could leave them out, but the flavor is
inherent to the recipe. Without them, it would pretty much be chicken and
bean stew.

Hmm thanks) Chicken and bean stew sounds nice) I haven't had a lot
to do with beans (except baked beans in a sauce of course) )
