I am working my way through my canned goods and will restock with fresher
ones before winter hits. We are eating far less canned stuff and more fresh but I like to keep it in case we get snowed in. I got this recipe from a magazine years ago but I always add more stuff. It's a good way to use up veggies. 3 cans beans (different kinds) 1 can corn 1 jar salsa Drain the liquid or not, depending on how thick you like your chili. I used a smaller jar of salsa this time. Just mix, heat and eat. Tonight, I added chopped fresh tomatoes (the last from my garden), a small chopped onion, about a Tablespoon of cocoa powder and a goodly amount of chili powder. Served with some sharp cheddar, sliced green onions and cilantro on top. Yum! |
