Default Winner winner pot roast dinner

I bought a very small pot roast at QFC yesterday in the clearance meat
section. I simply cooked it with beef broth, garlic, salt and pepper. I did
not make a gravy but reduced the remaining juice and defatted it.

Sides were purple potatoes, roasted with olive oil, kosher salt and pepper,
and a quick stir fry of yellow carrots, zucchini, and a clearance pack of
cooked, red and green peppers and white onions.

Simple, delicious but no leftovers.

Do you know what cut it was? I use 'blade roast' a toughish cut coming from the chuck. Although I've been known to use other cuts; sirloin tip(a tad lean), bottom round.

Do you have a personal little hangup with peppers? Worked too long in
a grocery store?

IMHO peppers detract from the great BEEF taste and are not necessary. My wife used to eat them every which way but I couldn't abide them.
I can eat some in Mexican type cooking but that is about it.

What would you cook it in then? And the peppers were in the stir fry.

As I said, this was very small. J. ate it over the course of two days. I ate
no meat except to taste it.

I sometimes do a beef roast in tomato sauce. It has onion, peppers, carrots,
celery, mushrooms and potatoes. It's very good!

I love peppers and put them in all sorts of things! But read it again. They
were not in with the meat.

Guess you never eat Pepper Steak. That's Chinese.

she said a very small pot roast. I've seen approx. 1 pound pot roasts
for sale, in fact there are now 2 quart pressure cookers for people
who make small meals. No dog required.

Why not braise in beef broth?

Even though we've established that the peppers didn't go into the
pot roast, I agree that I'd never put peppers in pot roast.

Normally I do two roasts because the ones I find are only about two pounds
each. I don't think that little one was even a whole pound. Not sure the
weight of the one I'm cooking now but it's much bigger.
