Default Fish flavoring recipe?

I would like a recipe for something to flavor fish - currently mostly
pollock or catfish fillets. I bought a bottle of Taco Fish Sauce at Walmart
but it seems to be just catsup flavored with some hot pepper. Not very
tasty. Doesn't help the fish much. Anyone have a simple recipe for a sauce
or flaving powder mix? Something you use. One great one is McCormick
Tomato, Garlic & Wine Sauce but it seems to have been discontined. Amazon
says not available & I couldn't find it in Walmart.

Ideas?

Mix in a good amount of parsley with mayo, add a small amount of minced onions. That's it. Don't add anything else. Good luck!

Hi Ken,

In my opinion, it's hard to be the basic lemon-pepper combo (so also
have garlic) for seasoning a white fleshed fish like pollock (or
Snapper!). It's sold as a mix so easy to work with.

If you want a sauce, I'd go with a basic white sauce.

In their version, they do not first lightly toast the flour then add
the butter (makes it more pristinely white but a bit less flavor). You
don't have to be super exact with this recipe and you can add seasoning
to the white sauce (most will in my area as it's pretty bland without
it).

Takes about 5 minutes to make (no special skills or gear though a small
wisk is easier than a fork to stir the flour and butter).

Search the internet for a recipe for fajita seasoning. If the ingredients
look good to you, try it.

For pollock fillets, I would spread a tsp mayo (it melts), a
bunch of tiny minced onions, then a squeeze of fresh lemon juice.
Put under broiler until the meat turns opaque (just a few
minutes)/

For catfish, I would sprinkle meat with lemon pepper, then flour
or use a thin batter and fry in some oil.

I like plain ol Old Bay seasoning on white fish. If youre looking for a
fish taco spice flavoring, I sometimes use an Ortega Fish Tacos spice mix
packet. Its different than regular taco seasoning mix. I also like
brushing filets with butter, mayo, or egg and dredging them in a mix of
flour or bread crumbs and grated Parmesan then baking. Ground nuts (or
Ritz crackers!) work very, very well for a coating, especially macadamia,
pecans or almonds, and Ill spice it up with various herbs and
seasonings€”use any you like! Do you like Cajun or creole flavors? You can
always mix up your own or buy a premade mix from the spices aisle at the
grocery store. I like Tony Chacheres or Chef Paul Prudhommes. They work
excellent on fish.

You mentioned McCormicks tomato, garlic and wine mix, but this recipe is
quite easy to do!

I try to cook fish at least once a week, and I almost never do the basic

if we are doing delicate flavored fishes like you
are mentioning there i like to keep it simple with
just a little garlic and butter.

when we do fish sticks in the oven then we like the
tartar sauce i've posted here recently (a lot of dill
pickle chunks).

since tastes vary so much it would be hard for me to
really suggest spices. i don't know if you like some
or hate others.

do you have any asian food stores around? they
usually have a good selection of curry blends and
sauces to experiment with for just a few $ each.

I tried a "Fishmama Spice" blend yesterday on pollock. OK but not as good
as I had hoped.

I'll try the lemon pepper next. Then if necessary some of the others from
this group.

I'm late in replying but it really depends on how you're cooking the
fish. I personally don't care for sauces on fish. If I'm not
pan-frying it I bake it using dry seasoning blends. I really like Mrs.
Dash Garlic & Herb seasoning blend (a light sprinkling) on mild fish
fillets before I bake them. A tip I learned here was to brush the
fillets with a little mayo to help the seasonings adhere. Also, put a
little milk in the bottom of the pan. That's a very old trick to keep
the fish moist. HTH.

Lemon, white wine and butter sauce (Sauce au beurre citronné).
