After I bought a large bag of carrots, I realized that I had two small bags
that had gotten tucked away in the wrong place. What to do? Carrot slaw! I cobbled this together based on asst. recipes because I didn't have all of the ingredients to make any one of them. I didn't precisely measure anything. Just kind of to taste. End result almost filled my 2.5 Qt. bowl. 6 large, thick carrots, grated Handful of Craisins Handful of pumpkin seeds, roasted and lightly sea salted Dressing is: 1/2 cup EVOO 3 T. white wine finger Tiny squirt of yellow mustard About 1.5 t. dried parsley About 1 T. dried dill weed About 1.5 t. dried chives Salt and pepper to taste End result is delicious! |

With extra carrots I would have much prefered carrot cake/muffins. I'll add one grated carrot to coleslaw for color and sweetness. You could have baked a carrot cake using pumpkin pie spice for Halloween. I also like pickled carrots and easy to make: https://www.delish.com/cooking/recip...arrots-recipe/ I always have extra carrots as I buy them in five pound bags for the deer. |

To me, this dish is a cross between a side dish and a dessert but like any dish can be modified to suit your taste. |

That being said, I once had a very tasty carrot salad at a very rustic restaurant just outside of Verdun, France. It was very finely shredded carrot with quite a bit of garlic in a vinaigrette. It also had a lot of black pepper. it was delicious. |

Cole (kool) means cabbage and slaw (sla) means salad/lettuce. Cabbage salad. |

Most people would think I took an automobile, but I could have taken a trolley car, train car, tram car, or elevator car. Cole = cabbage Slaw = salad. Coleslaw = cabbage salad Just slaw alone can be any salad. |

That sounds logical. There's not much that you don't dislike, and fewer things that your ailments allow you to eat. Won't be long till you'll be fed with an IV, Dextrose 5%. Maybe a liter of ringer's lactate once a day. If you aren't allergic to it. |
