I suppose that a lot of Americans believe that olive oil moves them into a better class of cooking. |

I suppose that a lot of Americans believe that olive oil moves them into a better class of cooking. It's just our standard oil. Nothing fancy about it. Up until the 80s, Dutch people thought olive oil gave you the runs. In reality, that was caused by unhygienic restaurants in Spain, Italy and Greece. |

People in the US didn't care about olive oil back in the old days. Oil was oil. The TV cooking shows in the 70's made olive oil an exotic and high class product. I was a bit shocked to learn that the Chinese are warming up to this product. https://www.oliveoiltimes.com/olive-...ding-now/62218 |

I wouldn't worry about that. It's all a process that takes a little time to mature. Europe and American have been doing this kind of stuff for a while. |

It's a useful talent to have. It'll be useful when making products for the growing Chinese middle class and the growing American lower middle class. OTOH, the Chinese are also able to produce high end products for crazy rich Asians. They pretty much can make products at all price/quality points. That's a very advantageous position to be in. |
