When I was young, there was ground beef for the usual things,
but ground sirloin for special occasions.

NEVER heard of ground brisket,
and I have serious doubts as to it's very existance.

Why would you doubt it? I've bought it and it is very good. You don't
see it often but it does exist.

It's a fad. People see ground brisket on some television show (I believe
I've seen it on Diners, Drive-ins, and Dives) or restaurant menu
and want to try it.

A whole brisket is more than a lot of people want to deal with, but
a little ground brisket is more manageable.

We go to a mom and pop burger place that smokes full packer brisket with
post oak and then grinds it to make their burgers. Very nice technique
they use and delicious. Much lighter smoked flavor than a burger cooked
directly over wood.

Very easy peasy... buy a brisket and grind it yourself... turn it into
burgers or whatever and freeze what you can't consume at that time...
if you grind it yourself you can inspect and trim any silver skin,
tendons, and excess fat... brisket contains more fat than most want in
burgers, meat loaf, or chile.

Cooking in an oven is an example of a way to cook a whole brisket. I'm
contrasting the seeming difficulty of cooking a whole brisket with the
ease of cooking a burger. People who can't cope with cooking a whole
brisket are surely not going to grind their own beef.

IF you grind up a brisket BEFORE it is cooked, and make burgers with
it, it IS just ground beef.

Actually NOT... it's ground beef but tastes very different from ground
chuck, ground round, ground rib, or every other beef cut... I can
assure yoose that ground top round tastes very different from ground
eye round. Top round makes great burgers but eye round burgers are
nasty.

If mixed in with other cuts and trimmings, yes. Most stores carry what
is common ground beef. Some do better. I can go to stores and find
ground chuck, ground sirloin, ground round, ground beef, lean ground
beef, extra lean ground beef, and meatloaf mix that is 25% pork. Each
of these has a little different flavor and different purpose
