Default Dinner Tonight 2/29/20

Happy Leap Day! I had a bunch of errands to run today, including going
to Publix for groceries. I really didn't feel like cooking when I got
home. I plan for such contingencies. Tonight it's store bought pizza.
Newman's Own brand white pizza (with spinach). I added some extra
6-cheese Italian shredded cheese blend on top. And a sprinkling of
Italian seasoning. The pizza is in the oven, directly on the rack now.
I especially like the crispy thin crust.

Not a bad choice of pizzas. I've seen them at the store and been told
they dress up well.

Report back how you like this brand. Rarely, rarely do I buy any other
brand than the Newman's Own; it is _that good._

We had extra-cheesy scalloped potatoes and broccoli. Plus ham for DH; I
felt the cheese in the potatoes was sufficient.

Good morning, Cindar.
I'll often eat just a salad for dinner. It's fine for a complete
meal as long as I add some mild cheddar and a chopped
hard boiled egg.

Anyway, I have some potatoes to use up before they go bad.
Was thinking about potato/onion soup but your scalloped
with brocolli sound good too. Hmmm - decisions, decisions.

I shall try one then! Much as we like to cook, we have those moments
too when we don't want to make dough and all that for a pizza.

Pizza (and dough in general) is not one of those things I think all that
much about. As you well know. This particular brand is very good
and I love just being able to pop it in the oven, right on the rack, and
have it come out with a nice crispy crust. No need for me to prepare
dough. I've made many a pizza dough in my time, from thin to thick
crust. It's so much easier to just pop this Newman's Own white pizza in
the oven. I always add a little more cheese. I love the spinach and
cheese combo.

I baked a whole rainbow trout. I rubbed the outside and inside with
butter, sprinkled salt, and a seasoning blend with garlic and herbs,
added some slices of lemon on the inside and some in the pan as well
as added a frond of rosemary inside the fish and one in the pan. Sides
were baked potatoes and asparagus. Costco vanilla ice cream for
dessert. Very good.

They really are good and I like them because they are a thin crust and
crispy, too. The only thing I add to mine is a generous shake of oregano
just as it comes out of the oven.

my favorite is the Italian sausage and uncured pepperoni. M-m-m-m-m-m

Thats ok! The world would be very boring if we all ate or cooked the
same!

I just finished making a batch of cookies. Had to have Don mix it
since Charlotte is off with her life in the Navy now. Came out good!
I don't make sweets often, just not our type of thing, but now and
again, it's good to make a batch of scratch cookies.

2C all purpose flour
1C brown sugar
2 sticks chopped butter
1/2c white sugar
1ts baking powder
1ts salt
12oz chocolate chips
2 eggs
OPT: 1-2ts vanilla extract

Oven to 375 and bake 11-13 minutes

You are supposed to cream all but the flour and chocolate chips
together then add the flour but I just dumped it all in and worked fine.

Becel now make margarine sticks that you can use "all in one" rather
than creaming first with the sugar. You can make an almost perfect pound
cake that way - perfect would be using butter instead of an artificial
spread:-)

Don't know about PDO but I bought a small block of Fontina at the same
time I was shopping for the pizza and the "Italian" cheese blend. I
bought the Fontina to snack on. Of course a piece of it tastes
completely different and much better than a tiny shred in what amounts
to pizza topping. I almost bought a wedge of Asiago, with some cheese
dip in mind... maybe next trip.

If you want to add a bit of meat you could try a little ham on the white
pizza or even some hamburger or bacon. As you said, easy to dress them up.

Yep. Just any other frozen dinner and there are many good ones
these days.

I'll have to try a Newman's some day.
The huge Wild Mike's is a good one.
I like the occasional Tombstone too.
Also that cheap, retangular Party Pack one for a quick snack.

I've had plans to make my own again soon but keep not making
one. Either a pepperoni or a white one with broccoli this
next time.

No need to skip it then. Eat then, when you get the indigestion,
just a bit of baking soda and water immediately ends it.

It's easier to avoid eating something I know will make me feel
uncomfortable. It's not as though my life depends on having pepperoni
on a pizza.

Don't say what? Do you expect me to magically find a freshwater lake
and some trout? I can't even find it in the freezer section. I've looked.

Different things bother different people. For some people it is hot
spices. I can handle reasonably hot food, or small quantities of really
hot. The pepperoni on a pizza doesn't bother me, but the cheese and
tomato is likely too.

Becel is a brand of margarine that is actually not too bad. I have used
it for cookies and date squares and it is pretty good substitution for
the much nicer stuff called butter.

The Becel sticks can be used straight from the fridge and Mary Berry has
published several all-in-one recipes using it in place of butter. I have
tried it and it works.
