I have an aging Sears downdraft range that needs replacing. The only
replacement down draft stove I can find is a Jenn-Air. The location is such
that an overhead exhaust system can't be installed. How about going without
any exhaust system at all. Any risks? What problems will it possible lead
to? Are other people going without an exhaust system.

In many areas of the US, it would be a violation of building code.

You may be required by local building code to install some type of
ventilation system. Personally, I don't really need one. The one I have is
probably only used a couple of times a year. I do all my frying outdoors on
a gas burner or electric appliance.

Dacor makes a down draft. YOu don't have to install a Dacor range to use
it. www.dacor.com.

Now, now, not necessarily. Foods that actually "require" an exhaust system
I choose to cook outside. Years ago I found that, even with a proper
exhaust system, grease vapor still managed to deposit itself on almost
every kitchen surface. I decided long ago that I'd rather avoid cleaning
this mess than periodically scouring every surface.
