Question for both of you: Bay scallops or the larger sea
scallops?

They are the perfect simple dinner. Make sure they are nice and dry,
season with a little salt and pepper, heat up a pan, apply just a tiny
bit of oil, slap the scallops on for a bit, flip them over and eat.
Just make sure there is a good sear on them for taste and texture. They
don't need to be cooked all the way through.

I never use oil, definitely they mate better with butter.

I asked this morning if they were local and they are, we are also in
touch with a local fisherman so for the time being we are all back to
fish, glorious fish, not what's left over after all the good stuff is
exported.

I managed them all, it was a duty really, they wouldn't taste as good
tomorrow

Given the price of scallops around here, I would consider 3-4 to be a
serving for one. If price were no object I would eat them by the dozen.
I love scallops, and this is my favourite way to cook them.

No, they don't. They're a beautiful golden brown with what looks like a
nice, lightly crispy exterior.

Don't worry, he means they are not the way they were served in the USN
