Technically, I started the prep yesterday. I'm trying a new dough recipe: <https://www.seriouseats.com/recipes/2012/07/basic-new-york-style-pizza-dough.html> I made a half batch since it's an experiment. Cindy Hamilton |

It worked out beautifully. The dough was a little difficult to form since it was so soft and wet, but it baked up like a dream. Cindy Hamilton |

Did you use cups instead of weighing? |

Nope. I set my scale to grams and weighed. Perhaps "wet" is a little overstatement, because I have relatively little experience with dough. But it was very soft. Cindy Hamilton |

Those that I follow have the machine running while you steadily pour in the water, after which you process for a whole minute. I've found that the longer time makes a difference. I would also add the oil after the water. |

I would also add the oil after the water. Hmm. I was pretty well satisfied with the outcome, but perhaps I'll try that next time (if I think of it). Our next pizza will be 00 flour in the Kitchenaid. It'll be my husband's turn to pick what recipe we use, and I'm sure he'll choose that. CindyHamilton |
