Default Kimchee fried rice

I finally tried kimchee fried rice. I was underwhelmed. It confirmed my
suspicion that I prefer kimchee cold and on the side like a salad.

Well, that's one more off my bucket list.

I experimented using it in a brown rice noodle stir - fry...it was okay, but it distracted from the other flavors...I too prefer it on the side, and cool...

My guess is that KFR is not very good on the mainland because people don't care about kim chee or fried rice. On this rock, it's the bomb. I love the freaking stuff.

You're right. I don't care about fried rice. As a side dish, it's too
much. As a meal, the proportions are wrong. Too much rice, not remotely
enough vegetable.

I love kimchee and all sorts of banchan, though. I rate the local Korean
restaurants on the quality of their banchan.

The proprietors of the restaurant where I tried KFR are FOB Korean.

mainland. Guess where you can find the best kimchi.

That's obvious. Down the street. Their kim chee is hardcore aged stuff. It's pretty rare. I can get regular real Korean kim chee at the Korean mart, or at certain fast food joints, or I can make it myself.

I can relate to that. Kim chee stinks. Even the Koreans know the stuff stinks. That's why they like to keep kim chee in a separate refrigerator. Sometimes they stick the refrigerator outside the house.

There's a steak under that mushroom. "Kim chee" is the Hawaiian word for kim chi or kimchi. It is spicy Korean pickles. In Hawaii, it typically means cabbage or cucumber pickles. In Korea, it could mean a wide range of pickled vegetables.

Kimchi fried rice is a popular dish in Korea and Hawaii. Korean fried rice is a pretty intense dish and has a distinct red color to it. Hawaiian style fried rice is a lighter, less intense version. It is the Westernized version of the Korean dish. It uses little or no red Korean chili pepper and will be tan in color. It's a great dish but can be intense and spicy.

I make kim chee fried rice just right but a Fresh Off the Boat Korean would probably think it's awful. That's the breaks.

A fried egg on top of fried rice is a traditional thing to do for the Koreans. I like to do that whenever I can too.
