I no longer bother with pre-salting to get rid of excess moisture and
have found no real difference as a result.

Yes, eggplants are different than they used to be. Seriously. Less
bitter skin, too.

We love eggplant but it's tricky to get right. Mostly, I use a lot of oil and high temperature. I like to burn the skin for a smokey taste.
