Default Copy Cat Recipe - Air Fryer

I used to love getting food from Taco Time NW. I have tried the Drive Thru
three times during the Pandemic. but the food just wasn't any good. I
checked online reviews and none of the locations get get reviews any more. I
think they are making some of the more popular items in advance now. The
Woodinville location even has a sign before you get to the ordering sign
that says, "Order these items first." I did get the food instantly but as I
said, it wasn't good.

I've been craving their crisp bean burrito which looks more like a flauta
than a burrito.

I looked up recipes. All were slightly different but a person who used to
work there said the trick was to heat and stir all of the ingredients
together, then chill the filing before use. He said they use enchilada sauce
and taco seasoning in the filling. I had neither so I improvised, but the
taste is spot on. Here's what I did.

1 16 oz. can of refried beans
1 t. Sofrito
1 t. chili powder
salt and pepper
1 cup shredded cheddar

I heated this all in a small saucepan, mixed it well and chilled.

I used the Mission Street Style flour tortillas because of the small size.
They are a bit thick. I realize that a thinner tortilla might get more
crispy but these are the size that fit in my Air Fryer.

Preheat Air Fryer to 400 degrees.

Assemble the burritos by laying a stripe of filling down the middle. Don't
overfill.

Roll up leaving the ends open. Coat lightly with vegetable oil.

Cook in Air Fryer for approx..4 min., turning halfway.

The one on the top was slightly burned at 7 min. When I do these again, I'll
do smaller batches. That seemed to work better.

The end result is perfect in both taste and texture.

You can do these in the oven or deep fry. I did read that the air fryer
gives the best results.

Well duh. You cooked it 3 minutes too long.

ObRealFood: I cooked my first 101% successful batch of fudge from
scratch last night at 2:AM(*). Just milk, sugar, butter, vanilla,
and cocoa powder - just like my great grandmother used to make in
1885.

This is very bad. I'm having fudge for breakfast, and am thinking
about making maple-penuche fudge this afternoon.

That's how I make fudge but sometimes I add peanut butter as well.
