I like East European breads a great deal but not bagels. Bagels are too gummy and chewy for my liking. When eaten they don't have the lovely aroma of ordinary baked bread. They're very popular, so it must be me. |

Sodium hydroxide is a stronger base than sodium bicarbonate. It gives a more pronounced effect, producing a better crust on the dough and promoting greater browning during baking, without affecting the flavor as a greater quantity of bicarb would do.
