My step-mom made some asparagus wrapped in bacon. Most things wrapped in bacon is pretty good. I'm not wild about asparagus but I had two of those. She baked it with some cheese and inexplicably, pine nuts.

breakfast, but those bacon wrapped tidbits are da bomb.

I like those large, soft ones you get at shopping malls. Those hard as a
rock type that are sold in the snack aisle at the grocery store are pretty
bad.

You boil bagels in lye water - drain cleaner if you're a tough guy.

I like East European breads a great deal but not bagels. Bagels are too
gummy and chewy for my liking. When eaten they don't have the lovely aroma
of ordinary baked bread. They're very popular, so it must be me.

Lye water is traditional. These days, people are afraid of lye so they use either baking soda or nothing at all. I love lye. OTOH, it's probably too dangerous for most folks to handle.

They aren't my favourite vegetable but if someone serves them to me I
will eat them I will enjoy them. My son loves pickled beets. It's my
wife who hates them.

The bagels sold in grocery stores and fast food places like Hortons
aren't very good, so it is easy to understand people not liking them. We
had incredible bagels in Montreal, and when my son lived in Toronto
there was a Lebanese bakery near his apartment that had great ones.

I've gone to recommended places after hearing rave reviews. But always
the same heavy, jaw-aching stodge.

The only bagels I've eaten are the ones from Panera Bread and there's only
one or two there that I like. One being the Asiago cheese bagel but it's
been at least 5 years since I've eaten one.

If the purpose of lye is to reduce pH then wouldn't baking soda (in a larger
quantity) be just as good?

It could be but I don't know. Adding baking soda and lye to water would increase its pH.

Sodium hydroxide is a stronger base than sodium bicarbonate. It gives a more
pronounced effect, producing a better crust on the dough and promoting greater
browning during baking, without affecting the flavor as a greater quantity of
bicarb would do.
