Default Fufu for you? (Dinner 9/1/20)

What I cook is heavily influenced by the bounty of my garden. Right now, I'm getting buried in tomatoes, green beans, and winter squash. And the weather is slowly cooling off.

Anyway, I had the urge for something tilted toward (West) African. A stew.

Fufu, butternut squash, kale, green beans, onions, garlic, celery, tomatoes, tomato paste, veggie bouillon, paprika, berbere (actually, that's Ethiopian, but I love the stuff), cinnamon. Not too much water.

My daughter brought back a similar recipe from Benin. Tasty

I used to work with West Africans, this was always a staple at work potlucks...very tasty, and everyone has their own "best recipe"...

Random follow-up, because entertaining.

The Congo Cookbook website (recommended, good-looking recipes) has this good entry on fufu: <http://www.congocookbook.com/staple-dish-recipes/fufu/>

Somehow I stumbled upon this Youtube video on how to make fufu: <https://www.youtube.com/watch?v=Z_XeI7n3aj8> 5 minutes?? It takes less than 2 minutes to make from a mix! All you do is mix the mix with boiling water and beat the crap out of it!

I am astounded at what people will make videos of. I wish I'd realize the desire of people to do that years ago. I would have dumped my life's savings into it and reaped a fortune.

Up until about 1980, all we had here was 5-6 local broadcast
channels and bad reception with them all.

Then Cox Cable wanted to expand to our city. First step
was to get approval from our City Council.

Well city council not only approved the move, they also
all bought up the stock packages that Cox wanted to sell
to fund the expansion. $3500 for so much stock and
some options attached.

City council members bought up all that stock right then.

When I read this in the newspaper, I would have borrowed
the money to buy one but it was too late. That seems
more than a bit illegal to me but it happened.

About 3 years later, Cox bought that stock back from them.
$3500 investment reaped $350,000 each. Those people
made a fortune but no ordinary citizen even got the
chance to buy in.
