Default And tastin' even better

I just finished dinner and OHMYGOD ! I had forgotten just how tasty
brisket can be . There MIGHT be some left by the time my wife returns
(she's in Florida Disneying with our daughter and her family) but I
wouldn't bet the ranch on it . I guess I better freeze the rest in one
piece for later smokin' .

I have never had brisket. One day, I'll try it.

Brisket used to be one of the low priced meats because it is a very
tough cut. The poor people figured out how to cook it to be tender and
full of flavor. In recent years it has become very popular and the
price is triple now, no longer the 99 cent special. You can even get a
brisket sandwich at fast food places. Poor people food to trendy, just
like chicken wings.

For the best you'll need to go to Texas . It's a hotly contested art
down there , mine is not even in their class . But pretty damn good for
an OCB .

We had $.99/lb Choice Brisket in mid-July at Safeway/Randalls :-P
Current price is $2.26/lb. Smoked at Franklins, Mueller's, or
Valentina's it goes for $30/lb. Which is a 600% markup after trim
and cook loss - twice the usual markup for restaurant food.

Brisket is best when ground before cooking.
