Default Friday night supper

Grilled salmon steaks, air fried sweet potato fries, steamed asparagus
and a green salad. Dessert was a frozen banana with peanut butter.

It was a beef roast with carrots and potatoes in the Ninja Foodi here.

Pork chops with sauteed onions, mushrooms, and garlic.

They turned out a little dry but still quite nice.

Next time use a can or two of "cream of mushroom" soup
or, if that bothers you, make your own version. That will
keep your chops moist and tender and the resulting gravy
is to die for...the soup combined with the pork flavor=yum!

My version: (I've never added garlic)
- Brown the pork chops on both sides briefly
- remove from pan, add a little oil and sauté the
sliced mushrooms and onions for a couple of minutes
- add one can of cream of mushroom soup and 1/4 can water
(or 2 cans and 1/2 can water)*
- stir that up well, add the pork chops back in
- cover and simmer on low heat until done
- time depends on how thick the pork chops are

* I always make twice the gravy. It's good stuff.

I had some chicken drumsticks. It's my least favorite chicken! It was cooked in a Ronco Industries rotisserie. I think a couple of chicken hindquarters would have been just spiffy. Too bad we no more.

What I really want is a rib roast cooked on the rotisserie. I told my daughter to pick up one but the store no more either. She brought back a chuck roast. I could barely hide my disappointment. Oh well, when life hands you a chuck, you make pot roast.

Don't be afraid to "undercook" them a little. A little pink inside won't
hurt you.
