Or tackos, depending upon ones pronunciation. I used canned Rosarita refried
beans for the side. Otherwise, a pound of ground beef, a package of
McCormick´s Original Taco Seasoning, some cheese, lettuce, tomato and oil
fried Mission White Taco Shells.
Not pretty. Quick, easy and pretty good. I even used a chipped plate for
authenticity.

"spices (including chili pepper, paprika, oregano), onion, salt,
potato starch, sugar, garlic, and natural flavor"

So all the other flavours aren't natural? Or is the "natural flavor"
such a gross ingredient that they don't want to specify any further?

"Don't ask, it's just a natural flavor."

"Water, organic corn masa, organic rice flour, cultured rice flour,
organic vinegar, malic acid, gums (organic guar gum, xanthan gum,
carrageenan)"

Organic rice flour? Hippie food? Careful, Leo, that could be a
communist conspiracy!

Then you'll just have to put your knee pads on, and crawl back

That's what I'm talkin about. Served on a paper plate in a basket
woven holder, this gets trailer park approval.

No, gringo. Mexicans have to eat off "chipped" plates in Leo's world.
They chip their plates when they climb over the wall to sell drugs
and rape American girls.

I don't understand the trailer trash food reference. Leo's not trailer
trash nor is that food. But politically speaking, Leo lives in a scary
place.

You dried up old ****, you'll ****ing die alone in your independent living
retirement community. If you ever had any thrills in life, they're well behind
you. You're coasting toward death, and when you die, almost no one will
even notice, much less care.

I got a recipe for enchiladas from a friend in Texas. He said it was a favorite Tex Mex dish at his family's diner. It was corn tortillas with Velveeta and a real basic tomato sauce. It was similar to Hawaiian cooking in it's simplicity. I guess your dish is of a similar style. I'd eat it for sure!

I'd have used crisp shells but it's just a desire for 'crunch' as part
of my taco expectatons.

The chipped plate made me smile. I have a few like that.

We used to have a set of those exact plates. They are probably
40+ years old.

But did the plates get chipped when the Mexicans were climbing "over the

How are those refried beans? I'm not a fan of pinto beans but I do enjoy
authentic, as in not using Crisco to make refried beans. Even the Mexican
joints around here, at least the ones I've visited, have switched to using that
nasty stuff.

I use the fat from frying pork chops for refried beans, and I use
canned black beans with the liquid and mash until the liquid reduces
leaving the mashed beans at the right consistancy. I can't imagine
using Crisco. I have a one pound can of Crisco in the fridge, used to
grease muffin tins for corn muffins... a one pound tin of Crisco lasts
me about ten years.

Believe me, refried beans using Crisco is AWFUL. Lard really give the beans
a great flavor and they're just bland as dishwater using Crisco. Blech!

Crisco produces a nice crust on corn muffins, butter won't.

Did you miss the funny part? You said you cant' imagine using Crisco
but then told how you use Crisco.

Sheldon suggested using oil that pork chops had been fried in. I've
done exactly that quite a few times.

It works too. Really, any rendered pork fat would be fair game.

Looks good (although I do prefer corn tortillas over the flour ones).

Believe it or not, those are white corn tortillas. I agree that they don´t
look like it. I don´t consider tacos to be made from anything but corn
tortillas. I think the corn/flour tortilla question for tacos has been
debated here before. One can call a flour tortilla prep anything they want
except a taco. But that´s just me.

Okey doke, allow me to revise my comment. I prefer *yellow* corn
tortillas. I'm the same way when it comes to cornmeal for cornbread.
Yellow cornmeal please, not white. Just my preference. I agree
about the flour tortillas. Mea culpa.

I agree with yellow for anything corn. I made yellow cornbread today. I
can´t imagine white cornbread, and the tacos looked like made from flour.
They tasted OK, but they didn´t look authentic.

The one time I had cornbread made with white cornmeal was when I was in
Boston. It was incredibly sweet and more like white cake than cornbread.

I plan to bake a skillet of cornbread made with yellow cornmeal today,
too. Normally when I make cornbread I sour the milk with a little white
vinegar to simulate buttermilk. I bought a jar of buttermilk powder and
will be giving it a try. (I'd used Saco brand buttermilk powder decades
ago; this is Hoosier Hill Farm brand.) Some might ask why I don't
simply buy buttermilk. I never think to add it to my list! If I drank
buttermilk, or if I made cornbread on a regular basis, buttermilk might
be something I'd always have on hand. As it stands, I never know when
the mood for cornbread might strike.

I use the same taco seasoning. Sometimes when I want that flavor but
don't want to go to the trouble, I mix a little with some shredded leftover
chicken breast and a little V8, then heat it through. A burrito rather than
a taco, because I always have flour tortillas but never corn tortillas.

Look what they've done to your topic, Leo! They have changed it from Tacos to Tacos of the hairy type. That's not right! OTOH, in Hawaii, a "taco" is a Mexican food item and a "tako" is a slimy sea creature with eight arms. You would be shocked to learn how many people get these things mixed up!
