Default Christmas morning breakfast is made

There will be four of us here on Christmas morning and it may be a bit
busy so I made breakfast today.

Take a package of Hawaiian rolls and slice the tops off, set aside.
Put the bottoms in an appropriate sized pan
Layer of cooked bacon
Layer of ham
Layer of shredded cheese. I used a sharp cheddar
Layer of cooked spinach
Pour 6 beaten eggs over top of it
Put the roll tops back on

Optional, brush the tops with butter and sprinkle on coarse salt, or
sesame seeds, poppy seeds.

Put in oven 350 for about 30 minutes.

I like the idea (except for the sugary rolls). Sort of like those
jimmy dean breakfast biscuits.

The original are not as sweet as the ones labeled sweet. There is
enough savory flavor so they are not overly sweet.

Not sure where the recipe came from. When I visited my friend up north,
she made them one morning and we had them for a couple of days. This is
my third batch since.

I ordered some vegan maple donuts from Whole Foods. That's as good as it
gets here.

There's some people making donuts with poi. It sounds weird but I've never tried them.

You should try it. They reheat beautifully.

Here's one that make four servings (for us):

1/2 stick butter, melted
5-6 slices bread, cubed
1/4 pound Velveeta, shredded (freeze a little before shredding)
1/8 pound Swiss cheese, shredded (we use Gruyere)
1/2 pound breakfast sausage, crumbled and browned
3 eggs
1 cup milk (or less)
salt and pepper
1/8 teaspoon dry mustard
cayenne pepper to taste

Coat the bottom and sides of an 8x8 inch square glass pan with
butter. Layer in half the bread and half the cheese. Push down
into the butter. Sprinkle on sausage, then layer in remaining bread
and cheeses. Beat together eggs, mustard, S&P, and milk. Pour
this over the layers in pan. Refrigerate overnight to let the bread
absorb the liquid. Bake 30-45 minutes at 350 F.

Goes well with a simple fruit salad.

I've made something similar using biscuits. A good breakfast casserole
is hard to beat. Enjoy!

I used to make something like them when Don would go fishing.

Just Hungry Jack canned biscuits but sausage patties, sliced cheese,
scrambled egg and thick cut ham in a sauce of russian red dressing with
a bit of Cholula for heat. I'd make up 3 per fisher and crew since
they are fairly small. They were quite popular.

I just setup ours. It's an all seafood and veggie Japanese Rice
Porridge. (Pescatarian acceptable). Bits of leftover seafoods at 1Cup
get added to the dashi based rice along with 1/2cup cut up bites of Gai
Lan and mustard greens (those at near serving time). I'll load the
rice maker with water this evening and the rest is in the fridge in a
covered container (baggie for veggies).

Looks great. I had the first bacon I have had in four months, half a
strip of side bacon and one slice of peameal bacon, scrambled eggs with
hot sauce and spinach, one slice of toasted whole wheat sourdough bread
and a small glass of apple cider.

Later on I tried a piece of my Christmas light fruit cake. I had had
one small sample of it when I made it more than a month ago and it was
surprisingly good fresh. It usually needs to sit for a month. It turned
out really nicely. It's a damned shame to go to the work and expense
when I am not supposed to eat it.

It's a spicy (but not hot) sort of thing. A little on the sweet side
for some applications but here, it matches. Most of that sauce syas in
the pan it was used in to fry the ham and sausage.
