Default Dinner tonight, 1/23/2021

Tonight is meatloaf, baked potatoes and broccoli.

In recent years I have been using the lipton soup recipe for meatloaf.
It makes a decent meatloaf and I can't stand very long. I also mix
the ingredients in my KitchenAid mixer. Easy does it with the mixer
speed and the meatloaf is ready to go.

Souperior Meatloaf
Makes : 8 servings Preparation Time10 minsCooking Time60 mins
Ingredients List
1 envelope Lipton® Recipe Secrets® Onion Soup Mix
2 lbs. ground beef
3/4 cup plain dry bread crumbs or 1 1/2 cups fresh bread crumbs
2 eggs
3/4 cup water
1/3 cup ketchup
Bake uncovered in preheated 350F oven for 1 hour.
Top with whatever sauce you like.

What are you having for dinner tonight?

Supermarket checkout lane women's magazine meatloaf. Slop in that
ketchup and packet of soup mix. Why not go full on Hamburger Helper?

You didn't recognize the regular, basic meatloaf recipe did you..
Many, many recipes call for ketchup or BBQ sauce, The soup mix
eliminatess the need for chopping onions and adding seasonings. But,
if you are familiar with women's magazines and Hamburge Helperr then I
bow to your wisdom. Those things don't interest me.

Gradually clearing out the freezer. So have thawed a T-bone steak that
will be served with steamed baby potatoes and mixed veggies. Washed down
with a good Bordeaux.

Who on earth puts Lipton onion soup mix in a home made soup?

"Dehydrated Onions, Salt, Corn Flour, Hydrolyzed Soy and Wheat
Protein, Sugar, Partially Hydrogenated Palm Oil, Caramel Color,
Maltodextrin, Natural and Artificial Flavors, Monosodium Glutamate,
Disodium Phosphate, Arabic Gum, Disodium Inosinate and Disodium
Guanylate."

We had a vegetarian pizza with a partial whole wheat flour crust (1/2
cup whole wheat flour and 1 1/2 cups white flour). Topped with a sauce
made from Passata and tomato paste, pepper, dried oregano, basil and a
crushed garlic clove, lots of red onion, red pepper, green pepper, hot
pepper and mushrooms.

Tomorrow we will be having grilled beef tenderloin steaks.

A hundred years ago I made meatloaf using the Lipton Onion Soup packets
and it was quite good. I think the next one I make will go with this version
again. Heaven knows, all my other attempts have failed miserably.

Thanks for the reminder!

I'm working on LIFO myself. Sometime in coming days I will do a nice
looking corned beef. After that, there are some steaks in the
freezer.

I love exactly that kind of pizza. I doctor canned tomato sauce with
herbs and it strikes the right flavor note for us.

Certified factory tortured chicken breasts.

The breasts were very large, boneless, skinless. Seasoned them and put
a couple of pieces of thick bacon on them,

Same pan was potato wedges with garlic and spices, Parmesan cheese.

The chicken was the most moist and tender ever. Not sure if it was the
bacon but I was impressed.

Took 45 minutes at 350 deg.

I have toasted onions from Penzeys and add them. In addition to the
ketchup I add sour cream. Makes for a moist loaf.

I had ordered a vac packed smoked turkey right after the holidays and
tonight we went to our podded family group and had the turkey, green
beans with almonds, some potatoes, Silver Palate salad of wild rice
with pecans, plain green salad, and corn bread made with added corn
kernels, jalapenos, and Colby cheese.

Lots of mustards and other tangy condiments, too.

Monday the rest of that turkey goes into bean soup.

I haven't made Beans Amadine in forever. I like the slivered cut
beans for that. You have awakened a craving.

Big salad (romaine, grape tomatoes, carrots) with grilled chicken on it.
Dressed with balsamic vinaigrette.

I always keep dehy onions and other dehy veggies in the pantry but
none of those chems except the msg. And meat loaf requires home
ground meat, none of that mystery meat here, then may as well use chem
laden soup mix. Dehy (granulated) garlic works well. I'm a strong
believer in dehys, especially bell pepper, how often yoose think you
have one in the fridge only to discover it decayed to mush. I also
keep an assortment of dehy 'shrooms, excellent for soups... only takes
30 minutes to rehydrate, carefully pour the liquid into soups but
discard the dregs. MSG negates heavy use of salt.

BJs has an entire aisle for spices and dehys at half the price of
Penzeys. Amazon is also a good source of spices and dehys.
They both carry restaurant sizes at big savings.
While grinding meat for meat loaf I grind in some raw potato for
moistness, also a carrot and celery, makes good meat pushers...
grinding in a bunch of parsely stems and all saves all that chopping,
and most would otherwise waste the stems. I grind in the onion too.
Only thing I don't grind in is garlic cloves, those stay in one clump
and are very difficult to mix in... granulated garlic solves that.
I gave up on Penzeys, their prices have become ridiculous, they no
longer have a catalogue, and their employees have no telephone skills.
I think Penzeys grew too big for their britches.
And I don't appreciate Penzeys pushing faggoty issues... I bet they
only hire faggots.

Being a Greek dish, one should use lamb:
https://www.bbc.co.uk/food/recipes/moussaka_6812

But veggie versions using lentils would be ideal for "Meatless Mondays":

We slummed it last night with a frozen DiJornos, adding bell pepper,
mushrooms and onions.

We got rid of Penseys when they unprofessionally abused access to our
email accounts to send political spam in 2016.

We use savoryspiceshop now. Just as fresh and if a group order,
shipping will be free and spices are far fresher than at BJs. No matter
who our group voted for, all were offended.

Meantime, I really like some of their unique blends at SavorySpiceShop!

I use a lot of dehydrated spices here. Several types of garlic (they
have unique effects between them) and curry blends.
