Default Friday Night Dinner

I went off the diet tonight. My wife picked up some halibut. I found a
recipe online. Dry the fish and season both sideswith salt, pepper,
garlic powder and paprika. Heat some olive oil in a pan and cook for
about four minutes per side. After the fish is cooked throw some butter
into the pan and let it brown a bit and then add fresh lemon juice and a
bit of parsley. It turned out great.

The vegetable side was a few green beans, sliced red pepper and and
chopped asparagus. Heated up some olive oil in a pan with one crushed
garlic, removed the garlic and sauted the veggies. Served with plain
white rice.

I had a dish I invented in this house, from the first year I lived here. Mushroom Cashew Pasta. I had two big portabellas, cut them up, sauteed in EVOO with some freshly ground black pepper, then added cashews and sweet paprika, some red wine soaked raisins and dried cranberries, boiled some spaghetti, drained, added to a big bowl with a hunk of butter, sprinkled a few red pepper flakes in and stirred slightly, then dumped in the mushroom cashew mix in and grated some Parmesan Reggiano on, ate and went into a Carb Coma for a while. YUM! :-)

I think it was more about the butter than the salt but I could be wrong.
He was recently diagnosed with Congestive Heart Failure and he has a
history of heart problems. I'm not a dietitian so I have no idea what
was "off the diet" with that dinner.

While both cod and tilapia are mild white fish, the texture is totally
different. The only cod I've had Atlantic cod. The fillets are nice
and thick and take well to [in my house] pan frying without falling
apart when I turn them. I haven't cooked tilapia in years. Yes, they
are cheaper and I do pay attention to cost. But IMHO there is no
comparison. Then again, I've not had Pacific cod.

There is nothing wrong with being frugal. But if one thing taste better
than another, why not spend a few more cents if you can afford it?

fried fish this evening too, this time Pacific cod. It's only

Is the opposite of 'unhealthful' 'healthful'? I haven't heard that one
although I do see 'unhealthful'

It's not uncommon to 'invent something' then find others have done it
before.

Happened once with some soft taco like thing I dreamed up in South
Carolina. I was early in my learning of making bread but I could do a
flatbread in a cast iron pan. These were 1/2 corn flour, 1/2 all
purpose with salt and baking soda. My room mates and I liked them and
thought they were sort of India like food. Give us a break, there was
no internet. No BBSes, libraries had card catalogues and it was about
1978. I'd partly mashed some pinto beans made with cumin, quick fried
some thin strips of round steak, an avocado and some minced raw onion.
Can of corn, drained. Served hot, we liked it! (Hint, it's closer to
genuine Mexican Tacos than what you are used to. Add Coriander and it
would be authenitic).
