Default weird flours

So I'm trying to cut carbs, leaning toward the keto diet.
Naturally I seek substitutes for 'general purpose flour'
in baking. There's almond flour, and maybe others.

Anybody here have any experience with these?

Sorry, when I cut carbs I just eliminate those foods.

Yes. We make a sort of "cheesy bread" with almond flour,
and it's tasty and of course, keto friendly. I've also used
almond flour as a thickener. It's expensive but fairly
versatile.
