Default Breakfast of Champions, Stuffed Pepper

Good stuff. Stuffed red bell pepper stuffed with ground pork, spices, mirepoix, and roast in tom juice and chick stock.
When I was younger, I liked the mix to be very high ratio, beef and pork, and not too much rice. These days I prefer lots of rice, equal parts by volume meat and rice
I saw a cooking show once, Ukrainian cabbage rolls. They used rice only, no meat. They cooked the dish for a few hours in water only, then added tomato sauce and cooked it more for a couple of hours. Never tried it that way.
