I've been busy so St. Patrick's came and went without my cooking the
corned beef and cabbage. It really doesn't matter which day I cook the
Corned Beef Brisket. I picked up a very nice the cabbage today and plan
to cook them both tomorrow in the crock pot.

Note: the cabbage has some very nice large leaves which I think I will
wash, blanch and freeze for possible stuffed cabbage at a later date. I
don't know if that will work but I'd like to find a way to use them, not
throw them away. Any thoughts about those large leaves?

Anyway, tonight I'm cooking a pan fried cod fillet. The vegetable side
will be sliced summer squash. I haven't decided yet whether I should
coat the squash with some finely ground seasoned cornmeal and pan fry it
in too, or (oh my gosh) steam the squash. Decisions, decisions.

At any rate, I have a couple of delicious meals planned for tonight and
tomorrow.

Stuffed cabbage freezes well. When I make stuffed cabbage I use the
rest of the cabbage for sweet and sour cabbage soup and cook the
stuffed cabbage in the same pot. Sweet and sour is from raisins and
fresh lemon juice.

Just guessing. Maybe better to make your stuffed cabbage now while the
leaves are fresh and portion the finished product for future frozen meals.

Alternatively, if you just freeze the leaves, you could always add them
to some soup in the future. No need to toss them out the window for the
rats. heheh

I'm thinking of making another 2 deconstructed stove top 'stuffed green
peppers' today or tomorrow. I've got all the ingredients except ground beef.

The vegetarian ones are good but they are much better with some ground beef.

I've seen a couple of linked trailers being hauled behind a big Semi
truck on highways. Not often. A "road train" like that obviously works
fine if you're in the middle of the desert and there isn't any traffic.
Wouldn't work in the US at all.
