Happy Earth Day!
Even though it's on its' way towards being over. Darn, I didn't wear my
Earth Shoes today. OB Food: Baby Dutch yellow potatoes (these taters are small!), boiled then placed on a baking sheet, lightly smashed, drizzled with oil, seasoned with S&P and roasted. Very tasty! Jill |

You should have at least tried them. They were amazingly comfortable. They came out sometime around 1980. I had seen them advertised so, one day at the mall, I went into a shoe store and tried them on. Unbelievably comfortable. Felt like I was walking on clouds. Actually put a smile on my face which is an odd reaction to trying on a pair of new shoes. Not only did I buy them but I kept them on. I carried my old shoes home in the new shoebox. Loved those things. |

Per Wikipedia: "In 1970, Raymond and Eleanor Jacobs founded the Earth Shoe company in the United States, after discovering Anna Kalsø and her negative-heel shoes in Copenhagen, Denmark. The shoes were introduced in New York City on April 1, 1970, three weeks before the first Earth Day." Jill |

I should have taken pictures of this one but we were hungry! Main was a butter stirfry of: carrot, Gai Lan (you can use regular broccoli but use stem too), Mushrooms (3 types), Bell peppers (4 colors), Daikon, Sweet onion, 1 large clove minced garlic and cooked Udon noodles. 'Sauce' was vegetable broth with a bit of soy and 'Duck sauce' and cornstarch. Nicely colorful. How much of each depends on your own desires but for us the first 4 were close to 1/2 cup each then 1/4 cup each of Daikon and onion. The Udon was about 1 1/4 cups. We have a leftover 3/4 cup in the fridge. Sides we plain white rice, tangerine, a few cashews Might seem odd to some but as I've said, while we emphatically are NOT vegetarian, we tend frequently to have several days a week where you wouldn't know we weren't. This one may qualify as vegan as well. |

Going in the crockpot now is a hog jowl (pepper dry smoke cured) and bean batch. It's a bit of a twist on 'red beans and rice' being the meat is different. The meat type may be a bit unique to some parts of the south. Will serve on rice tommorrow. Also making Cod for dinner where it is simply baked with butter and black garlic sea salt. |

I was thinking it was after I first got married (1979). Then I realized, I was with an old girlfriend when I bought those. We were together from summer of 1972 to the summer of 1973 so that's when I bought the earth shoes. Again though, they were so comfortable and I really liked them. |
