Potatoes O'Sqwertz and Eggs
Leftover baked gold potatoes, diced and fried in EVOO + soybean oil
and seasoned with FGBP, basil, oregano, thyme and coriander seed last 3 minutes. Diced green peppers and red onion sautéed separately and mixed in at last minute so the potatoes wouldn't lose their crisp. https://i.postimg.cc/FHxbJyZ8/Potato...z-and-Eggs.jpg Topped with two fried eggs topped with Sontava Habanero sauce. I happen to have some boiled/smashed oiled and roasted small gold potatoes from a few nights ago so that part reheated in a skillet for this breakfast/dinner is easily covered. I'd scramble the eggs and add some grated cheese. The addition of any sort of hot sauce would depend entirely on my mood. Fried potatoes, eggs, bacon. In a skillet? Yum! Jill |
